Machine Stuffs Sausage and
Presses Fruit.
A machine that will be welcomed ou
the well appointed farm is the combi
nation sausage stuffer and fruit presser -
er invented by an Illinois man. A
metal cask 1ms vise attachments by
which it can be clamped to the side of
a bench. A perforated cylinder fits
inside the cask , and a press operates
inside the cylinder. To make sausage
a long spout is fastened to the bottom
tom of the cask , and over this spout
the sausage casing isdrawn tightly
so thit no air can enter the skin and
the meat can be kept fresh much long
er for ILiat reason. The "meat is placed
in the cylinder and the press turned ,
forcing it out through the perforations
in globules and in that form through'
the spout into the casing. To press
fruits and jellies the spout is not re
quired unless it is desired to run off
the juice. The material is simply
placed under the press and squeezed to
the proper consistency.
Codfish Balls.
Make a pint bowl of codfish picked
into flakes and not freshened and put
two pints of small peeled potatoes into
a saucepan. Add fish and turn boiling
water over it. Let boil until pota
toes are well done , turn off all the wa
ter , then mash potatoes and fish until
they are smooth and fine. Add piece
of butter size of egg , a little cayenne
pepper and two well beaten eggs. Bent
the mixture vigorously until very light
and drop it by spoonfuls into boiling
fat and fry to a rich golden brown.
Drain on brown paper in oven where
they will remain hot till time to serv.e.
- Kound Steak Rolls.
Oet a round steak uo > over one-half
inch thick and cut it into portions
about the size of one's hand. Sprinkle
each piece on one side with salt and
pepper , fold into it a small piece of
suet , skewering it into a roll with
toothpicks. Roll in flour , brown on
both sides in hot fat in the frying
pan , then add a sliced onion and
enough water to cover. Simmer gen
tly for air hour , transfer to a hot dish ,
add browned flour to the liquor in the
can anil make a brown gravy of it
Curried Apples.
Try curried apples with the pork
roast. - Peel and core the appies and
fill the cavities left by I he < ores with
a mixture of curry powder , grated
cheese and fine bn > : id rumbs. For
eight apples use four lablospnonfuls
of the c-heese. a tnblespooaful and a
half of cnrrv and eight of the crumbs.
.Moisten the mix lure wli'i ' milk. The
apples are baked as usual and arc
served hot or cold.
Haricot of Mutton.
For mutton haricot roll two pounds
of breast mutton in finur and brown it
in dripping' ' . Then put it into a stew-
pan with two sliced onions , cover with
boiling water and cook very slowly un
til it is tender. Turn in a couple of
rupfuls of parboiled potatoes or the
same quantity of boiled macaroni and
a pint of green peas. Simmer until the
potatoes are done and serve.
Creamed Dried Beef.
A tasty luncheon dish miy : be pre
pared \vtth sliced dried beef , a tablespoonful -
spoonful of butter , a tablespoonful of
flour and half a cupful of cream. Put
the beef into a pan , cover it with cold
water and biing to a boil. Then drain ,
stir In the butter , and when the but
ter is melted add the flour and cream.
Season lightly with pepper.
Removing Ink Stains.
A spot of ink may be remover ! from
a carpet by the timely treatment of
salt put on it immediately after the ink
is spilled. Put the salt on the ink-
thick , and as soon as it show ? color at
the top it is removed and a fresh layer
given. When the la.st dose shows no
signs of color the salt is scraped away.
