The old fashioned molasses is rap
idly disappearing as an article of com
merce said a prominent grocer and
in its place have come a number of
sj rups which are more costly and by
no means as satisfactory especially to
the little ones who delight as we did
when we were young in having lasses
on their bread Most of the molasses
goes into the distilleries where it is
made into rum for which notwith
standing the efforts of our temperance
workers the demand is constantly on
the increase especially in the New En
gland States and for export trade The
regular drinker of rum will take no oth
er liquor in its place if he can help it
It seems to reach the spot more direct
ly than any other dram
The darker brown sugars have also
disappeared and they are not likely to
return owing to the methods of boiling
and the manufacture Granulated su
gar is of the same composition as far
as saccharine qualities are concerned
as loaf cut loaf cube and crushed and
differs from them only in that its crys
tals do not cohere This is because it
is constantly stirred during the process
of crystallization The lighter brown
sugars taste sweeter than the white
for the reason that there is some mo
lasses in them Housekeepers have dif
ficulty these days in finding coarse
dark sugars which are always pre
ferred for use in putting up sweet pick
les making cakes and similar uses As
they cannot get brown sugar any more
it may be well for them to remember
that they can simulate brown sugar by
adding a teaspoonful of molasses to
each quarter of a pound of the white
granulated sugar This combination
does as well in all household recipes
that call for brown sugar as the article
itself and besides it saves them a great
deal of hunting for brown sugar
which as said before has disappeared
from the market

450 pounds the Indian bale 400 and the
Egyptian bale 717 Some idea of the
vast extent of the worlds cotton area
says an Atlanta paper may be gathered
from the fact that in the United States
alone it covers over 20000000 acres
In 1S30 the worlds total output of cot
ton aggregated only 637000000 pounds
or eleven times less than in 1S95 With
in a single decade however the prod
uct almost doubled amounting in 1840
to 1192000000 pounds Sinee then the
worlds product has been as follows
2391000000 pounds in 1860 4039000
000 pounds in 1SS0 and 72SO000000 in
1S95
