Feeding the Family By MRS. KAY LEIDIMi Extension Home Agent Do family appetttles lag In hot weather? An Interesting report irom t ooa Technology tells of a Marine chef frying two onions while preparing a meal for a thousand men. When asked what he was doing with Just two on ions, the chef explained that when the mess hall smelled of fried onions, the men ate better. I wonder if the aroma of fried onions would help mom think of somctning quick to serve, easy to prepare and nutritious for the family? Don't throw out chocolate ju.st because it has turned white. Food specialists from USDA say this is simply a sign that some of the cocoa butter has separated out. This happens at temperatures of about 85 degrees F. The co coa butter in the chocolate melts A Correspondent from the Murray area is needed at once to write news for THE PLATTSMOUTH JOURNAL ( Call 2141 or write The Journal for particulars. and comes to the surface. When the cocoa butter hardens again the chocolate turns white. Onl" the appearance of the chocolate is affected by this separation. Usually there is no loss of flavor. If the chocolate is melt ed for cooking purposes It will turn brown again. To prevent chocolate from turning white, store It in a rea sonably cool place under 75 degrees). By State of Nebraska Department of Health School authorities require a birth certificate for children en tering school for the first time. If records had been as care fully kept in the past, much difficulty and expense could have been avoided. People seek ing to establish a delayed birth certificate .should contact the county court of the county of j birth for instructions if t h e y j were born before 1904, the date! when Nebraska began register-! ing births. ! Examination of school records j discloses the fact that in far i too many cases, the census had been miscopied from year to year. Obviously, none of these can be used unless at least one coincides with some other kind of record such as an Insurance policy over five years old or a baptismal record. Other discrepancies have been found when, through careless- ! ness. the wrong birthdate was! sent to the State Bureau of Vital j Statistics or the child's sex was ; wrongly stated. One can imagine! the complications Involved in I the lattet case when a marriage license is to be Issued. ' j We may well ask, "Have you checked your birth record; is It! on file in the Bureau?" A bill- fold size copy is available for! general use. For overseas travel,; It Is not acceptable; a complete certified copy showing parents' names and pluses of birth is re- i quired. ! When requesting a copy of ; your b:rth certificate, write to j the Bureau of Vital Statis'ics, I S'.atc Capitol, enclosing $1.50. i Oive full name, date, and place j of birth together with the names ; of both parents.
