Take eggs., An egg should be more than 43 hours old and less" than 10 days. Mile. Lebee can de termine an egg's age merely by the quality of the white and the film left within the shell. Most American housewives would instantly discard t h e -French cooking teacher's ome- -lette pan. It is a battered black cast iron utensil. But the pan has certain subtle qualities not apparent at ia, glance. For one thing, it is just the proper thickness to produce the perfect omelette. A heavy pan, cautions Mile.
