Hark, to the story of the low ly "hen fruit." Of all the foods in the Amer ican diet, the egg has an almost universal role. It can be part of every phase of meal prepara tion. The versatile egg may begin the meal as part of some ap petizer. It may become the main dish or important to it; and finish the meal as a custard, cream pie or cake. It can be boiled, poached, fried, scram bled, whipped, beaten and mixed with a variety of ingredients to become batters and doughs. Winter, summer, spring or fall, the egg is in season. It may be part of a plebian picnic salad as well as the base of an epic urean omlet. But the egg is . not important alone for its qualities as a food. It has been the subject of leg islation and the cause of litiga tion. It has been lead character in novels, movies and plays, as well as inspiration of fairy tales and nursery rhymes. The egg too has had a peculiar role in farm economics since the first time "the bottom fell out of prices." Along with the cream check, the egg has been credit ed with saving more farms from mortage foreclosure than any other commodity. So long as there was feed and hens layed and cows milked, a hard work ing farm family was given a chance to keep the family farm. Such farming may not have paid the mortgage, but it fed the family and provided enough ad ditional perhaps to pay the in terest or enough of the interest to indicate good faith to the mortgage holder willing to cred it intentions. And that, in part, is some of the story of the not so lowly "hen fruit," the personality kid of the food world.
