Sweeten Fruit Before Freezing Most frozen fruits have better flavor and texture if packed in sugar or syrun than if unsweet ened. Exceptions to this rule are rhubarb, gooseberries, cur rants, figs and cranberries, whieii freeze as well without as wi; h sweetening. The best way to pack a fruit for freezing depends cn how it will be used. Emit packed in syrup generally is best served -as is" for dessert; fruit packed in dry sugar or unsweetened is better for pie or other cooking use because it is less liquid. Even though most unsweetened fruit is not of highest quality when frozen, it may- be packed this way for special diets. The syrup recommended for most fruits is a 40 per cent r.yr un that is. 3 cups of sugar dis solved in 4 cups of water. For seme miid-flavcred fruits such pineapple wedgi cs or canta-; loupe balls a less sweet syrup is better because it dot's not mask; the delicate fruit flavor. In con- : trast very sour fruits like sour cherries mcy need a sweeter, syrup. Coin syruo may replace up to a fourth ot the sugar in ; the syrup, i" desired. An even : larger proportion of corn syrup may be used if the newer, very bland, light-colored kind is chosen. Honey also may be used to replace one-fourth cf the sugar ; in" the syrup for freez'ng fruit. but only if the family like 3 its very definite flavor which may mask the fruit flavor. The very : light-colored mild honey will change the natural fruit flavor! less "than the strong-flavored type. I For a dry sugar pack, simply j cut fruit into a bowl, sprinkle on i sugar as required for the fruit, ' then mix gently with a large srjocn until the sugar dissolves: in the juice from the fruit. Granulated sugar, either beet : or cane, may be used to make the syrup or to pack fruit in dry ; sugar. Continued from Page One) and stay granted until final hearing.
