Chicken Stuffed With Chestnuts.
From the New York World.
Draw and clean the chicken a
usual. Roapt one quart of large chest
nuts ; when done remove shells am
smash. Put one-half of the chestnut :
in a bowl ; add a teasnoonful of butter
a teaspoonful of salt and a dash o
pepper ; mix and fill the chicken tin
same as with bread crumbs. Lard th <
breast thickly with salt pork ; place th <
chicken in a baking pan , add a half :
cup of water and a half a teaspoonfu
of salt ; roast in a quick oven fifteei
minutes. When done , dish , remove tin
strings and skewers , garnish will
parsley. Put the remaining chestnuts
in the pan in which the chicken was
roasted , mix well , add a half pint oi
stock , stir until it boils , add salt anc
pepper to taste and serve in a boat ,
Chickens may also be stuffed will
oysters or potato stuffing.

STATE CONVENTION.
Nebraska Young Men's Christian
Association , Hastings ,
Nov. 17 to 20.
The 13th annual state convention of
the Nebraska Young Men's Christian
Association will be held at Hastings ,
Nov. 17 to 20 , and a cordial invitation
is extended to all members of associa
tions , college students , railroad men ,
commercial travelers , pastors , business
men and teachers , and a special invita
tion to young men from towns where
there are no associations. Mr. J. R.
Motte , international college secretary ,
of New York City , L. Wilber Nessor ,
general secretary , of Chicago , and Rev.
A. J. Nathan , "the converted Jew , "
will be present from abroad and will
take part in the sessions of the conven
tion. Some forty of the leading work
ers in our own state will take part on
the program. The program will in
clude reports from the field , Bible ad
dresses and a thorough dis
cussion of methods of work among
young men , Bible study and personal
work , work for young men in foreign
mission lands , the consideration of
unoccupied fields , and many other
items of interest. Special conferences
will be held for college men , officers
and directors , for committeeman , on
district work , for college men and for
delegates from unorganized towns.
Delegates should send their names at
once to F. I. Carruthers , general secre
tary Y. M. C. A. , Hastings , Neb. Free
entertainment will be furnished also.
There Tvill be a rate one and a third
fare on the certificate plan on all rail
roads in the state. For credentials and

Credentials from towns where there
are no associations should be signed by
the pastor. This is the young men's
gathering of our state and our town
should be well represented.
Nebraska Republican.
The republicans of Nebraska hav <
reason to congratulate themselves upoi
the outcome of the contest in this state
The democratic plot to capture th
electoral vote of Nebraska by throwin ;
the bulk of the democratic vote to tin
Weaver electors has miscarried. Then
can be no doubt that Nebraska wil
cast her electoral vote for Harrison
although the plurality may be compara
lively small.
Lorenzo Crounse has been triumph
antly elected governor of this state fr
at least 12,000 plurality , and all thi
republican candidates on the stati
ticket are doubtless elected by plural
ities ranging from 10,000 to 12,000.
Returns so far received indicate tha
both houses of the coming legislatun
will be republican by a small majority
insuring the return of a republican t <
the United States senate. This is mos
gratifying , because unexpected. Thi
most extravagant estimate of republi
can strength in the next legislature wai
a membership of from 62 to 65.
It is now certain that at least threi
of the six republican candidates fo ;
congress have been elected , with :
possibility of the election of fiv <
members.
In view of the tremendou odds
against which the republicans of thii
state had to combat , coupled furthei
with the fact that they were left en
tirely to their own resources , th <
splendid victory achieved is a source o :
supreme satisfaction to every republi

The Loss Adjusted.
We are pleased to announce that the
insurance men have adjusted the loss
and the store of J. Albert Wells is
now open to the public , although re
pairs are being made. The decorators
and painters are at work on the south
side which will be placed in good shape
in a short time. Longer time will be
required on the north side where the
most of the damaged occurred.
The period of mourning at Washing
ton for Mrs. Harrison , so far as
external observance is concerned , will
be necessarily brief. The cabinet
ladies have decided to limit the time to
thirty days. It is one of the exactions
of official station that private grief will
not wait upon public duty. The White
blouse is not a habitation dedicated
strictly to the uses of the home and
'amily. It belongs to the people and
ts occupant is the servant of the
) eople. And thus the sense of sorrow
which the president would fain cherish
and keep alive in form as well as in
spirit must yield to the necessities of
lis responsibilities as a public figure ,
and the social obligations which his
) osition imposes must be resumed in
obedience to a demand which cannot
> e set aside , even though to obey must
wound the tenderest sensibilities of the
icart.
Preparations are under way for a
dance to be given in the Menard opera
louse tonight by the young men of the
city.
