A bill has been introduced into
the legislature of the stateHouse -
House loll No. lS ( , ; Senate File
No. JIf-which 'providcs for
Dairy Inspectors whose duty it ,
shall be to inspect dairy products
and to prevent the sale of milk ,
cream or butter that is unfit for
human food. 'rhe enforcement
of this law will prevent thc dair-
mcn from selling 'milk or cream
that is unsanitary surroundings
or conditi us ; it will prevcnt the
creameries which buy cream from
keeping cream In undesirable
places such as the storeroom of
some grocery store surrounded by
onions , fish. oil or rotten vegetables -
tables and then making into butter -
ter to be sold at a low price.
'l'he two principal objects aimed
at in this measure are a square
deal for both dairyman and
creameryman in the testing of
cream and an improvement in the
quifIity of dairy products. causing
them to bring a hetter price in
the market ; and if by these
mcans it is possible to improve
the quulity of cream and butter I
so that the buller fat which the
dair'man produces and sells
would bring one cent per pound 1
more than was received last year ,
the increased price would pay ten
times over , the annual expense
nccessary to establish and maintain -
tain thc Dairy COlUmission.
