' MOLASSES VINEGAR.-One pint ,2 of New Orleans molasses stirred into a quart of rain water. Tie mosquito netting over the open crock ( earthen. ware ) containing the mixture to ex. clude dusL and set in a warm closet by night , in 11 sunny window by day. It i shoultl be sour in a fortnight. Strain [ lnd bottle. BEARNAISE SAUCE.-Beat the ) , yollts of two eggs very 11g11t , put Into 0. round bottqmctl saucepan anti set in one of boUlng water , stir into it , a few drops at a time , three tablespoonfuls of salad 011 , heating as j'ou stir ; thon. as gradually. the same quantity of boiling water ; next , one tablespoonful : > f lemon juice , a dash of cayenne and salt. It is served with all sorts of fish ; 1l1so with chops , c ltlets anti steaks. LEMON SNAPS.-Ono egg. one tea. cupful of sugar , one.half teacup of butter. three teaspoonfuls of mlllt. one . teaspoonful of cream tartar , one.half I teacupful , of soda , two small lemons. juice of two and grated rInd of one ; I ( lour to mix rather stiff. Roll and cut . ' out with a caItO cutler. CHEESE PUDDING.-Grate cheese and crush broltcn and dried bread and crusts into fine crumbs. There should bo fwo cupfuls of these to one of cheese. Wet the crumbs wIth two cup. fuls of milk. in which has been dis. solved a bit of soda no larger than a lima bean. Beat two eggs light , whites and yolks apart ; whip the yollts into i the soaltod crumbs with a tablespoon. i ful of melted butler. Season with salt ! \.ntl \ a dust of cayenne , add the frothed whites , deftly and rapIdly ; bake In a greased pudding dish In a brIsk oven , lweplng the dish covered until the fondu has puffed hIgh and Is crusty on top.
