Agana , Island of Guam , April 12 , 1902.-RepuDLIcAN-Perhaps there is nothing we miss more than the beautiful twilight of the temperate 7.one. Here day and night come on so suddenly that we lose the restful sense so noticeable in longer twilight there , 'Vith our still air and damp atmosphere the sun . . : fcm5 to rush out of the ocean with a suddness and heat that makes the morning very like Midday. ' I' We do not have that gradual change wInch makes the summer days 50 beautiful in your latitude. Summer here begins with December - ember and continues till June , then the winter sets in and lasts till December. This distinction of seasons is made on account of the moisture , and not tempature. The summer is the dry season and winter is the wet season. It has been almost impossible to know much about any thing here from the natives , and the Americans - cans have been so transient that they knew but little of the local conditions. May is evidently the dryest month and also the hot- test. The theomomoter will no doubt register hot weather in June , July , August and September - tember but the rains and cloudy weather moderate the climate very much. The Typhoons occur during June till December , although this period is usually the most qniet. 'Vith December comes pleasant breezes and sometimes - times moderate gale . Severe typhoons strike this island about once in 40 years if the reports are reliable. The typhoon which visited this island in 1900 , was very severe and its effects are very visible. In fact fruit trees have not yet recovered. It was this typhoon that blew the"Yosemite" out of the harbor here and left it to sink in the Ocean north of this island. The "Justin" was also in the harbor at the time , but its anchor held and was saved. It. was the "JustIn" that took the men off the Yosemite before it went down. After this typhoon of Novamber 1900 , there was nothing green left. on the Island , for the salt water was blown over it so that ev rything not killed by the wind was destroyed by the salt. All the native' houses were' unroofed and but few left stand- ing. The house in which we live was then occupied by Mr. Press y and other naval officers , and the ocean rose till it covered most of this city and was two feet deep around this house. All thQ houses with sheet iron roofs were uncovered. This house was very little damaged in any way be cause of its heavy tile roof , laid in cement. These tile roofs give us a feeling of securety against storms , but they make us nervous when earthquakes set them to grinding. The Nipa ( Neepa ) roofs of native houses are made of Cocoa-Nut tree leaves and are very good , but last only about 3 years. If we had such windy weather as is Common in Nebraska - ka , these roofs would be torn off every month. H. II. HIA'l"I' . Office of the Nebraska , Food Commission , Lincoln , Neb. 'ro Consumers of Vinegar in I Nebraska : Fraud in the sale of vinegar it1 Nebraska consists largely in the sale of vinegar artificially colored so as to look like cider vinegar . The laws ot the stat ( forbid the sale of any "inegaJ artificially cole ed and allY persor selling or having in possessioI with intent to'seU' stich vinega1 is liable to a fine of from $50 h : $100 , and costs of prosecution The consumption of vinegar i so great that it is not possible tc supply the demand with cide : vinegar , hence it is necessary tc that other kinds be used. As authorit ) ' for this statetnent in regtrd to vinegar 'attd ' its essential part , acetic acid , tuc food commission refers by permission to II. H , Nicholson , professor of chemistry , state university - iversity , at I J. M. Nelson , chemist - ist for food commission. VINI\GAH All vinega..r resultG from the acetic fermentation of alcobolic liquids. 'l'he esse ntial part of an ) ' vinegar is the acetic acid which it contains. The acetic aciel comes from the fermetation of the alcohol. Alcohol is the same whether it comes from grain or fruit , corn or apple , and when subjected to the same kind of fermentation it will change into the same acetic acid. Therefore the acetic acid of a distilled vinegar is the same as the acetic acid of a cider or malt vinegar and for practical and domestic - mestic purposes distilled vinegar is just as good as cider or malt vinegar. DISTII.L1\D VIN1\GAH . Distilled , or white wine , vinegar - gar is obtained by distilling ofT I the aldohol from the fermented : wort from grains such as corn I and ryo. This kind of vinegar is colorless , and contames no substances injurious to health. CIDI\R VINEGAR Cider vinegar is derived from the juice of apples by allowing the I 'sugar and starch of the apple to' ' change into alcohol and subjecting - ing it to acetic fermentation. Cider vineg-ar has a color varying from pale yellow to a deep red. MALT VINI\GAH Malt vinegar is made f.r m acetic fermentation of wort from barley , con and rye. It differs from distilled vinegar in that the alcohol - hol is not distilled off before i.t is changed into acetic acicl. This vinei'ar has a color varying from reel to brown , and a peculIar - Iar malt-like odor. S. C. BASSRT , Deputy Food Commissioner. , " ' 'fO 1 THE COtIGH !
