WHAT CAN WE DO?
Omaha housewives who have been

to help win the war?” have found

grease from housewives and paying
five cents a pound for it.
Though hundreds of Omaha wom

to relieve the shortage of fats, they

For instance—what kinds of
grease are needed and how should
it be prepared? The answer to the
first question is, "Every kind of
waste fat—bacon and sausage drip
pings, fat from roasts, steaks and
chops, bits of left-over butter. Fish
onion and other odors have no ef
feet on the value of the grease." As :
for preparing the grease, two rules
should be followed: (1) The grease j
should be free of food particles and
moisture, and (2) it should be kept
in clean, dry containers, preferably
in the refrigerator.
Grease should be strained through,
cheesecloth or a fine mesh sieve be

chops can be rendered in the frying
pan, the grease poured off and the
bones thrown away.
As for containers, grocers have
asked that good-sized tin cans be
used. The grocer will empty the
containers, so that they can be used
indefinitely. Glass jars and narrow
topped receptacles are impractical.
Then there is the question of ran
cid grease. Yes .rancid grease can

THE OUTS AND THE INS IN
THE CITY ELECTION
The outs are trying to beat the
INS in the election May 12th.
The outs claim they will give tho
City of Omaha Better Government
than it is getting now. Better gov
ernment for WHOM? WTill it be
better for protected vice and crime,
if they win. or will it be better for
all the people?
As a matter of fact, Omaha under
the Butler Administration has been
well governed, better governed, in
deed, than it ever was in by gone
days. And for this better govern
ment credit is due all the present
City Commissioners in general and
Mayor DAN B. BUTLER IN PART
ICULAR.
Anyone who thinks that "protect
ed gambling and vice” are coming
back, if Butler should be beaten, is
in need of a mental specialist.
be used, but clean, fresh grease is
more desirable from the Tenderer s
standpoint. It’s best to keep the
grease in a cool place and dispose of
it frequently, to prevent rancidity.
Women- who save grease and
make their own soap have asked if
this isn’t just as satisfactory as
selling the grease for commercial
soap manufacture. Of courss It ;s
a commendable and thrifty practice,
but there’s just one point to remem
ber—when soap is made at home,
the glycerine is not recovered.
Some women, active in church
groups and clubs, have suggested
that their organizations collect the
grease and sell it directly to the
renderer. This can be done, but it
is simpler to sell through the gro"
ers. Packing house trucks have
regular routes for picking up waste
and refuse from grocers and butch
er shops; they can also pick up
grease, thus conserving tires and
gasoline.
And lastly, there have been rr,
quiries as to the use of the grease.
Will it be used in making lard and
other foods? Absolutely not. Pood
inspection laws protect the house
wife, and she can be certain that the
grease will be utilized only in soap
manufacture.
Those days are gone forever in
Omaha and all over the land. For
get it.
The dictates of common sense and
self-respect alike require that every
citizen who wishes well for his city,
vote for the Present City Commiss
ioners: Mayor Dan B. Butler, Harry
Knudsen, Richard W. Jepsen, ‘Wal
ter Korisko, John Kresl, Roy N.
Towl, and Harry Trustin.
The less said about the outs, with
a single exception, the better.
VOTE FOR THE INS and con
tinue Good Government, which we
shall always strive to make better.

FOR BUTLER
Omaha, Nebraska
May 9, 1942
Editor The Omaha Guide.
I am for Mayor Dan B. Butler in
the present City Election, because
he has been an honest, efficient
public official. He has done his
full share to make Omaha a decent
city in which men and women may
live and rear their families. TUe
money the people have paid in tax
es has been honestly and wisely
spent, largely because Mayor But
ler saw to it that it was.
And while the colored vote in the
last election did not go to him is it
should have done, he did what was
fair and right by the Colored iieo
ple by appointing Willis Gray and
Dr. Solomon to their former posts.
Mr. Gray’s present salary is $135.00
per month, which he deserves and
more.
Few officials would have done so.
During Mayor Butler’s present term
The Health Department under Ma
yor Butler has, in cooperation with
the State Health Service, set up a
Free Clinic on the Northside. As
a result of this, two additional Col- j
ored Physicians have been appoint- I
ed. The three are Dr. W. W. Solo
mon, Dr. Wesley Jones and Dr.
Price Terrell. Two of the physic
ians named here receive $135.00 per
month, one $80. The present Health
Survey being conducted here is un
der Omaha Health Director, an ap
pointee of Mayor Butler. For the
past several years RECREATION |
has been under Mayor Butler. Here ■
i
several workers are employed.
Under no other administration I
throughout Omaha’s long history,
have the colored peple been givi-n
representation of such calibre.
For all these things he deserve
the votes of all colored men and
women who DESERVE THE
RIGHT TO VOTE.
