Form into cakes. Dip first in beaten egg, then in cracker crumbs. Fry in hot fat until golden brown. (If deep fal is used fry at 370 degrees, approximately.) Chocolate Masquerade Pudding squares un sweetened cho colate; 3 cups ot milk; y3 cup sugar; 4 tablespoons cornstarch; ]4 teaspoon salt; 2 egg yolks, slightly beaten; 1 teaspoon vanilla; 2 egg whites; 4 tablespoons sugar; >4 cup shredded coconut. Add chocolate to milk and heat In double boiler. When chocolate i is melted, beat with rotary egg j beater until blended. Combine sugar, cornstarch, and salt; add small amount of chocolate mixture, stirring until smooth; return to double boiler and cook until thick | ened, etirring constantly. Then , continue cooking 10 minutes, stir ring occasionally. Add small amount of mixture to egg yolks, stirring vigorously; return to dou ble boiler and cook 2 minutes longer, stirring constantly. Add vanilla and turn into greased bak ing dish. Beat egg whites until foamy throughout: add sugar, 2 tablespoons at a time, beating after each addition until sugar is blend ed. Then continue beating until mixture will stand in peaks. Pile lightly on chocolate mixture and sprinkle with coconut. Bake In moderate oven (350* F.) 15 min utes, or until delicately browned.
