1 Thick slice of pork steak
4 Tomatoe", modium sized
4 Potatoes
>4 cup finely chopped omion
1 T. vinegar
1 %. prepared mustard
2 T. buttcy
2 T. flour
14 t. sugar
% cup hot water
Salt
Pepper
Salt and pepper pork ateak.
Brown lightly on both sides in a
hot fryinv pan. Cover, reduce the
heat, and simmer "lowly for 30
minutes or until tender, place t.V
moat on the fire proof platter, and
arrange around it tomatoes cut in
halve*, with the out surface dipped
in flour a«d brown in the ham fat.
Place resettee of mashed potatoes
between the tomato halves. Place
platter in a hot oven (400 degree*
P.) until potatoes are browned
Brown flour, blend in butter mak
'ing a brown sauce. Add the chopped
onion heated in vinegar to the mix
ture and cook for 10 minutes. Re
move from "tove and add mustard,
sugar and *alt. Pour «auce over
pork ateak. Place rings of green
pepper around tomato halves and
garnish with ar*ley or celery heart*.
CREAMED CHICKEN
2 T. flour
2 T. Butter
1 cup milk
*4 t salt
>4 t. white pepper
Me.lt butter in a sauce pan. Blend
In flour and add milk slowly. Stir
until thick. Double this to make
as much a« needed.
Cut cold boiled chicken in cube*.
Add to sauce. Mur brooms may be
aded if you like.
ORANGE SHORTCAKE
1 recipo Rich Tea Biscuits
4 large needless oranges
Powdered sugar
Make rich biscuit dough. Divide
in half. Shake into 2 large round'
to fill in layer cake pan. Place one
round in pail; spread with soft but
ter. Pace other round on top
spread with soft butter. Bake ir
moderate oven at 400 degrees aboul
25 minutes. Split arrange whoh
sections of orange pulp, free fron
all skin, between layers and on toj

mountain steps out upon the gimpli

this be true or not, a good word
can be «aid for him.
Most of us Americans look upon
the mountaineers a« backward and
ignorant people. This is probably
intellectually true, but one thing,
this seeavs evident. Whatever they
think they know and are led to do,
they do it with all their might. Re
member the man who let the rat
tle snake bite him? He recovered,
probably not because of definite
and correct interpretation of
Scripture, but rather because of
firmness of conviction and simpli
city of faith. These mountaineers
may have a vague idea about God
but we plainsmen should serve Got
more sincerely than they becaust
we know more and have bettej
light about Him- Suppose we d<
exactly what we are warned anc
spiritually inspired to do. Omahj
and Nebraska would become a “ha
ven of rest-”
May we who live down in these
“plain*," as well as the mountain
eers, sing and say:
