Casserole of Beef,
Potatoes and Pea*
One teaspoon shortening, one
small onion, chopped, one-hnlf tea
spoon salt, one fourth-fourth tea
spoon pepper, one pound beef, cut
in small cubes, one cup peas, one
and one-hnlf cups mashed potatoes.
Cook onion in melted shortening
until soft. Add salt and pepper.
Brown pieces of beef on both sides
con bine cooked onions and beef,
add water to cover and cook until
tender over low flame. Place meat
and gravy in bottom of greased
casserole. Add peas and cover with
mashed potatoes. Place in moder
ate oven ?nd cook until potatoes
are browned.
Date Butterscotch Pudding
One-fo*urth cup minute tapicoa,
one eighth teaspoon salt, two oups
hot water, six tablespoons brown
sugar, one half teapoon vanilla,
one cup chopped dates, three ta
blespoons butter. Cook tapioca and
salt in water in a double boiler un-j
taniocn is clear. Stir often.!
Melt the butter in saucepan- Add
sugar and stir until melted. Add
tapioca mixture, vanilla and dates.
Pour in butter baking dish and
bake for thirty minutes in moder
ate ) v-en. Chill ar.U 'nerve with
cream.
Caked Corn and Tomatoes
Two cups cooked corn, two cups
tomatoes, one teaspoon salt, pep
per, one tablespoon sugar, one cup
bread crumbs, three t^ble.‘(poons
buttter. Mix seasonings with corn
and tomatoes, pour all into greas
ed baking diAJi. Sf.yerC c^un-|'is
over the top. Dot with butter and
bake in a moderate oven for one
hour.
Glorified Cole Slaw
Three cu^>s jshredddd cabbage,
one half crp grated carrot, one
small green pepper, chopped fine,
one egg yolk, one cup sour cream,
four tablespoons mustard, one half
cup lemon juice, sugar and salt to
taste. Combine egg yolk, mustard,
seasonings and sour cream- Pour j
over cabbage, carrot and green pep
per and mix well. Iiast add the
half cup lemon juice. Serve cold.
Deep Dish Apple Pudding
One quart peeled, cored and slic
ed apples, one half cup granulated
sugar, one half cup brown sugar.
Put in well buttered baking dish.
Stir brown sugar, flour and salt
until well blended. Crumble over
top of apples and bake in moderate
oven until done. Serve warm with

One tablespoon melted shorten

and one half oups rolled oats, two

spoon vanilla extract. Mix with
shortening, add eggs, one at a time
beating in well- Add rolled oat»,
baking powder, salt and vanilla
extract. Mix well. Drop in greased
tins about half teaspoon to each
macaroon. Allow space, to spread
Bake in moderate oven about ten
minutes. Makes about three dozen
cookies
