Summer, with an overabundant supply of fruits ad aptable to jelly making, inspires the homemaker to make « great varie ty of jellies nnd jams. The fruit cabinet looks well filled and that homemakers wonders If she has not been to" enthusiastic in prepar ation for winter. However, the spreads for bread are all so deli cious that the supply just seems te melt away and midwinter finds the shelf growing emptier day by day. That should not be ularming with the markets filled with possi bilities for a variety of sweets that the family will enjoy. Citrus fruits lend themselves to many different recipes, alone and in combination with other fruits. Cranberries ar« ever present, the contents a geirt aid in furnishing necessary food elements for better health during the cold weather. A simple plan is to buy so-called gallon chns of various kinds of fruits, some commercial pectin, plenty of sugar and that empty shelf will be well stocked once more. Jams and butters may be pre pared from dried fruits, such as pears, peaches or apricots. Cranberry Marmalade 2 oranges, lVa cups water, 2 cups cranberries, 6 cups sugar, and Mi cup liquid pectin. Peel the oranges and slice the skin of one of them thin or run it through a food chopper. Cook in the water in a covered saucepan until tender- Add the oranges and cranberries which hnve been put through a chopper and boil gently for ten minutes. There should be three cups of fruit pulp. Add wa ter if necessary to make up this amount. Add sugar, bring to a full boil and boil rapidly for' two min utes. Remove from stove, add pec tin and stir well. Pcur into clean hot glasses and seal with paraffin. Orange Marmalade 4 oranges one-half grape fruit one-third lemon, and sugar Remove seeds from fruit. Cut fruit into very thin slices. Cut each slice into quarters. Remove pithy inner portion from each sec lien of fruit. Add one andvone-half quarts water to each pound of fruit. Let stand 24 hours. Boil hard one hour. Add 1 pound sugar to ouch pound of fruit and liquid Boil slowly 45 minutes, or until juice sheets from spoon. The following recipe, for con serve might be a suggestion for using up small amounts of left over fruits. I proportions are kept in accordance with the recipe, other fruits may be substituted than the ones mentioned. One cup canned peaches, one cup canned pears, one cup crushed pineapple, one cup diced apple, one-half cup orange juice, one-half cup lemtm juice, one cup sugar, one half cup pecan meats and one cup liquid pectin. Mix all ingredients exce.pt nuts and pectin- Cook slowly for 45 minutes- Add pectin aiuf boll rap idly for three minutes. Add nuts. Ptmr into clean, hot glasses and seal with paraffin. Dried Fruit Jam 1 pound dried fruit. i3 cups sugar Wash fruit thoroughly, cover with cold water. Heat slowly to belling. Simmer until soft.
