to one—I can mix a pretty fair salad,
and this is the way I do It:
"I’m eclectic about what goes In,
though I always insist on a base of
crisp lettuce or romalne, which has
been properly washed and dried and
long enough on the Ice to be brittle.
I like particularly well to have a few
beans or peas to scatter over this
lettuce and to make my dressing I
chop very fine a bit of onion, a few
nutmeats of any kind that happen
to be handy, a hit of green peppei
and always a hard cooked egg or two,
depending upon the quantity I am
dressing. This mixture I sprinkle
thoroughly over my salad, and then
I pour over It a dressing made after
the old-fashioned recipe—'a pinch of
salt, a dash of pepper, a niggard
with vinegar, a spendthrift with oil’
(this means at least three times as
much oil as vinegar, and don’t be
afraid of four times as much), and.
finally, to quote the recipe, ’a devil
of a stir.’ He sure of your stir, and
It does no harm. In my judgment, to
let the mixture stand a half hour or
so—that Is, mix it when one first
sits down to dinner instead of waiting
until the salad course.”
