Mushrooms Have High
Food Value as Well
y as Delicacy. .
Mushroom are a choice food, and
are really one of the thing! on which
epicures ipend a great deal of time.
On the other hand, they have high
food value, and it is quite true that
in certain parts of the world native
tribes of people count mushrooms
among their few staple of food.
This is said to be the case in Terra
del Fucgo.
Here are tome good ways of pre
paring mushrooms:
Mushroome in the Chafing Dish.
" One cup of stock, one-half pound
of fresh mushrooms, two tablespoons
of flour, a few drops of lemon juice,
three tablespoons of butter, two
tablespoons of grated cheese, toast,
salt and paprika to taste.
Wash 10 -mushrooms, peel the caps
and cut in large pieces. Season
with salt and pepper and dredge
lightly with one tablespoon of flour.
Melt two tablespoons of butter in
the chafing dish, add the mushrooms

and cook four minutes. Remove to
a hot dish. Make a brown sauce by
melting the remaining tablespoon of
butter. Add the remaining table
spoon orflour and brown. Atld the
stock. Stir until the sauce thickens.
Return the mushrooms to the sauce
and cook until they are reheated.
Sprinkle with cheese, season with
lemon juice and serve.
Smother Mushroome.
One-half cup of stock, one-half
pound of fresh mushrooms, one
tablespoi-n of butter, one-fourth tea
spoon, of salt, yolks of two eggs,
three . tablespoons of flour, one
fourth tablespoon of paprika.
Wash and peel the mushrooms.
Melt the butter in the chafing dish,
add the mushrooms and season with
the salt and pepper. Put the cover
on the chafing dish and cook for
eight minutes. Add the flour; stir
until it it tmooth. Pour in the
stock and when heated itir in quick
ly the yolki of the eggs. Serve at
once.
Never serve more than one fried
food at a meal.
