and you will learn what is the " power behind the dough' In
the high-class powders it is cream of tartar, extracted from
clean, delicious grapes, and that is healthful In the low-grade
powders it is "phosphate alum' or "sodium aluminum sul
phate' which is also alum, a mineral acid, and that makes
the food unhealthfuL
Of what use are twenty-five ounces for twenty-five cents,
if eight of these ounces are alum ?
Food baked with alum baking powders is fotsad to
contain a portion of the alum unchanged I
The continued use of alum made food impairs digestion,

A WONDER OF JAPAN.
The Fniuou Ciintlc of tlir Gold Dal- i
llllllN lit NiNlllllII. '
Is the novel castle at Nlslima, Japan,
the palace which Marco rolo described
In his tale of tho marvels of far Cathay
as covered with gold slabs? At the
ends of tho ridge of tho pyramidal
structure are large solid gold dolphins.
Beneath the pile Is a well which Is lit
erally a salted gold mine. It Is gold
lined and will hold sutllclent water to
supply 5,000 persons. The dolphins,
which were placed on tho top several
centuries ago, haye excited tho curiosi
ty of foreign relic hunters, as any one
might Imagine they would. So many
have climbed to the top of tho high
structure to discover by testing If they
arc real gold that the dolphius have
become seriously disfigured. Strong
steel wire bags have been put over
them to prevent further vandalism.
Only by good fortune does one of
these dolphins still grace the old cas
tle. A number of years ago it was tak
en down and sent to Vienna for exhi
bition at the world's fair held thero as
a rare specimen of ancient Japanese
art The vessel on which It was being
returned sank, and It lay at the bottom
of the sea for several years In spite of
every attempt to raise It. Persistence
was rewarded at last, for It was finally
recovered and placed again In Its old
position.
The castle Is used by the emperor of
Japan as his headquarters during the
army aud navy reviews. State balls
are also held there. Chicago Inter

The grewsome spectacle of a public
execution In England Is happily a thing
of tho past. Tho scaffold used to be
erected In the roadway outside the
prison, and crowds would assemble to
witness the sight, the last time a man
was hanged In public being when Mi
chael Barrett suffered tho extreme pen
alty In May, 1808, In Old Bailey, out
side Newgate prison, for exploding a
cask of gunpowder under tho walls of
Clerkonwell prison to release the Fe
nian prisoners Burke and Casey, a mad
act that killed several and Injured still
more. London Graphic.
