Domestic.
JTominy Griddle-Cakes. To one
pint of warm, boiled hominy add a
pint of milk or water,and flour enough
to make a thin batter; beat up two or
three eggs, and stir them into the b.tt
.ter with a little salt. Fry as any oth
er griddle-cakes.
Irish stews are never seen in Ireland.
Catgut is not the gut of a cat but ot a
fhcep. Kid gloves are not made of
lambskin but of sheepskin, lilacklead
dues not contain a particle of lead, but
is composed of carbon and iron. Seal
ing wax is not wax at all, nor does it
contain a particle of that substance.
Peach IJlane-Mangc. Boil in one
quart of sweet milk ten fresh peach
leaves. "When flavored, take out the
leaves, add sugar to taste, and one cup
ful of corn-starch dissolved in cold
milk. Stir constantly. I'oil for a few
minutes and turn out into a freshly
rinsed mould. Eat with jam and
cream.
Apple Cobbler. Line the sides of a
deep pie-dish with short biscuit
dough. Fill with good cooking ap
ples and cover with a pretty thick
crust. When baked lift oil" the crust ;
turn it bottom up on another dish,
sweeten to taste, mix a lump of but
ter, and cinnamon. Then spread on
the crust. Eat warm with cream or
milk. T
Potatoes, lioxbury Style. Heat one
tablespoonful ot butter in a saucepan,
odd ono teaspoouful of flour, cook un
til smooth but not brown, then add
gradually one large cup of cold milk,
stirring all the time until it boils up ;
put in the potatoes, which should be
cut up line and salted and peppered;
let them cook about three minutes in
the sauce, just enough to heat them.
Oatmeal, Indian meal and hominy
all require two things to make them
perfect; that is, plenty of water when
lir-t put on to boil, and a long time to
boil. Have about two quarts of boil
ing water in a large stewpan, and into
it stir one cup of oatmeal, which you
have already wet with cold water;
boil this an hour, stirring often, and
then add half a spoonful of salt', and
boil an hour longer. If it should get
toostitT add more boiling water; or
if too thin, boil a little longer ; you
cannot boil it too much.
"Washing Kettles. This is often one
of the hardest and most disagreeable
tasks connected with the after dinner
work. If convenient, it is preferable
to wash as soon as emptied, and before
dinner, but this being often impossi
ble, the next best thing is to fill with
cold water and leave until you are
ready to wash them. I have a never
failing supply of pure 60ft water con
ducted from a mountain spring to a
box close beside my kitchen door.
Here there is a waste water spout,
making one of the nicest places imag
inable for freshening fish or soaking
pans and .kettles, i know from past
experience, that a cistern is nearly as
handy as my water box. In the ab
miico of plenty of water. I find it good
to put the kettles on tlie stove with a
dipperful of water and cover closely.
The steam will keep them well soaked.

Weighting Silks.
The weighting of silks has grown to
be an evil of fcuch magnitude, that ex
perts who have devoted special study
to the subject do not hesitate to affirm,
of the practice in France, that its ef
fects are becoming positively ruinous
to the silk-growing departments of
that country. M. Moyrct, whose
opinions on the subject we have al
ready had occasion to notice, in a re
cent communication in lieiilman's
Farber-Zcilung, shows that the high
class products of France are no longer
in demand, for the reason that inferior
and cheaper foreign silks serve quite
as well for loaded tissues. Hence, ac
cording to the writer, thce districts,
already su tiering lrom the ravages of
the phylloxera and from the loss of
the madder trade, arc in the utmost
distress.
lie makes tho suggestion that the
same principle that i3 followed in the
valuation and sale of gold and silver
should bo adopted with silks, namely,
that the proportions of the real article
and of the weighting matters be ex
actly specified, and that a central office
for the cheap and expeditious assay of
silks should be opened at Lyons." In
conclusion, it may not be without in
terest to note, that M. Moyrct credits
a Xcw York iirm with the unenviable
distinction of having practiced the
most excessive weighting of silk that
has come to hi3 knowledge.
