Vinegar Candy.- Stir together and bring to a boil throe oupfuls of sugar, half a cupful of vinegar and half a cup ful of water. As soon as this mixture boils stir in one teaspoonful of soda dis solved h a little water. If tho candy is preferred o ear, stir it as little as pos sible; if gta nod, stir it. Among nations who pass their lives out-doors, catarrh and scrolula are almost unknown; not fresh air, but tiio want of it, is the causo of countless disomies, of fatal diseases when people nro in the habit of nailing down their windows every winter to keep their children from opening thorn. Mix togeth er two cups of sugar, two-thirds of :t cup of butter, two eggs, six -tablespoonfuls of sweet milic with half a teaspoon ful of soda dissolved in it and Hour enough for a soft dough with a tea spoonful of cream of tartar sifted through it. Add a cupful of tho chopped meats; drop, in spoonfuls on buttered tins, pat into shapo and bako to a light brown. Chicken Jolly. Cut; half of au un cooked chicken into small pieces and break tho bones: pour over it a quart of cold water and boil slowly until it is reduced to less than half; season with salt and a littlo peppor, if the latter is allowed tho invalid. Strain through a oolanuor, then through a jolly-bag into a mold or a bowl. If the chicken is quite tender boil carefully tho breast of tho other half of it; cut it into dico and put it into tho mold or bowl and cover it with tho liquid. When tho jelly has hardened scrape oil" tho layer of fat at the top of tho mold before turning tho jelly on u platter. Old English Plum-Pudding. It should not bo suffered to stop boiling. SntlsfAotory Modes of Curing Pork The season for curing meats for homo consumption is now at hand, and although formulas aro given ovoryyear, a few hints embracing all that is really uecessarv on tho subject will doubtless bo of asslstauco to a largo class of road ers. A secret of many failures in curing moat lies in the fact that tho animals after slaughtering havo not hung long enough to thoroughly cool previous to being cut up and packed. The car casses are often exposed to nn utiims phero cold enough to froozo the outer surfaco boforo tho animal heat has all cu'iiped. Tho consequence is this heat, surrounded by a fro.on wall of llosh, remains in and around tho bones to sour and spoodiiy causo decay at tho center of hams, shoulders and tho like which present a fair outward nppoar anco. Cut the middles crosswiso into pieces livo inches wldo for pickled pork, and tako out the back-bone and ribs. This will leavo tho meat in 11 convenient condition to cut in suitable pieces when required for use. Now packages aro tho best, but old ones may be employed repeatedly, provided thoy bo clean and sweet. Tho packages must bo abso lutely clean ami freo from taint of any description. Old pork barrels ought never to bo used for packing down beef, and tho beof tubs should not bo employed for packing pork. It is also advised not to uso tor this purposo either sirup or molasses barrels. Saltinj; with and without brino are both satisfaotory methods when prop erly done, but tho proforenco is usually eiven to tho latter uecause tho brino or pickle used insures immunity from in sects during tho pickling process. When tho pork is ready for packing, sprinkle tho bottom of tho barrel liber ally with coarso salt of good quality, pack tho pieces on thoir edges, lorming a ring around tho inside of tho barrol witii tho skin outward; fill tho ring in tho same way until a complete layer is gained, then press and pound it down gently, if necessary. Next apply a gonerous layer of salt. Follow this with a layor of moat placed according to tho directions given for tho lirst ono, and so on until tho barrol is filled, tak ing caro that tho last layor of meat is covered with a layer of salt. If tho woathor is cold tho moat may stand sovoral days in this condition, but as a rule it is tho safer plan to at once add the brine, which must bo made sufliciontly strong to lloat an ogg. Lot the scum riso to tho top, and skim it off boforo applying the brino, which must entirely covor tho meat. If it is in an open package weight tho pork down to insuro its rising abovo tho picklo. Employ enough salt so thoro will be somo not dissolved in tho barrol when tho meat shall havo been used up. Tho brino extracts blood and other juices from- tho moat. Those rise to tho surface, and in very warm weather are liable to decompose and contaminate tho contents of tho barrol. To avoid tainted meat from this source tho brino may bo drawn of occasionally, boifed, skimmed of its impurities, and when perfectly cold again poured over tho meat. This precaution is espociallv noco'sary at tho South, whore tainted moat is moro liable to occur. When barrels containing pickled pork aro headed up it is advised to lay them on their sides and roll them over occasion ally. There aro some porsons who profor to prepare brino by adding to tho salt somo sugar or molasses and saltpeter. When these additions are desired, allow for every hundred pounds of pork soven pounds of salt, throe pints of molasses or two pounds of brown sugar, and four ounces of saltpeter, lloil the picklo boforo using it and skim off all tho impurities. Lot it bocomo thor oughly cold before pouring it over tho meat. Thoro is really no danger of injury to any but tho leaner portions of tho hog's carcass by too much sale. Sido pork does not readily bocomo ovorsalt, hav ing so largo a per cent, of fat. Jn pickled pork no harm is done by a superabundance of salt; but bacon must be differently treated, for choice bacon is that presenting alternate stripos of lean and fat, arid too much salt renders the lean uart stringy and tough. Dry salting is gonoraily re sorted to in making side bacon. For dry-salting, 1. c, salting in bar rels, boxes or pilos. without llio addi tion of water to form a brino, it is of tho utmost imnortanco that 110 chance bo afforded for flies to deposit ogirs or maggots or to come in contact with tiio moat. If Hies havo access to tho pork it cannot then bo saved unless at onco put into brino or kept in a temperature so low tho eggs cannot hatch, the lat ter boing not often practicable. A simple way ill which any portion of tho hog s carcass can bo cured without brine is to put a la) or of half an inch of salt on tho bottom of the box or cask, then a layor of moat; 011 this a liberal sprinkling of salt and so on until all is paokod and tho ton well covered with salt. Such portions as aro not to bo smoked should bo stored in brjno bo foro insects appear. Pork should bo out to suit tho de mands of tho different markets in which it is sold and Iho various uses for which it is intoudod, but in all cases the aim ought to bo to have it in such form s will pack closely. Never pack down until thoroughly roliovod of ani mal heat throughout. Then I consented to tho use of St. Jacobs Oil, which my wife applied two or three times before I anno.
