The proof of a pudding, is in the eating and the best and eurest test of flour is to cook it, but it is frequently desirable to know how to select good flour, at times when it is very inconvenient to apply this test, and at such times it is well to ob eerve these rules; First, look to the color; if it is while, with a yellowish or Etraw-colored tint, buy it. If it is very while with a bluish cast, or. with white fpecks in it, refuse it ; second, examine its adhesiveness, wet and knead a little cf it between your fiDgers ; if it works soft and sticky, it is poor; third, throw . a little lump of dry flour against a emooth surface, if it falls like powder, it is bad ; fourth, squeeze some of the Aom in your hand, if i retains the pressure, that too is a good sign; fifth, place a thimbleful of it in the palm of the hand and rub it gently with the fioger of the other hand. If it smooths down under the fioger, feeling silky and silppery, it is of inferior quality, though ot lancy brand high priced aLd white as the virgin -Enow drift. Such flour whatever may be its branded reputation, though its price be at the lowest figure will make good, light, nu tritious bread. . Thelargest sheep ever seen in Amer ica, it is' claimed, was lately sent by Mr. Jchn Colly, of Albion township, Canada, to Hitchcock &, Son. of FanemI Hnll market, which was on exhibition this week in the market. The sheep was of the 'Leicester breed, three and a half years old, and weighed, alive, 45S pound?; dressed, 353 pounds; and 8100 was paid for the carcass ; the hind quar ters to be sold at 50c. a pound, and the fore-quarters fcr 25c. The fat on the ribs was eight inches thick. The iron rust on the bit causes a can ker sore in the corners of the mouth which makes a horse very unpleasant to drive. The leather will heal the sore and in two weeks time, the horse wil drive up on the bit in good style. .... m m . Timothy and Cloteb. A corresnon dent of the Northwestern Farmer, cives the three following reasons why clover and timothy seed should always be sown together: Jbirst, the clover being tap rooted penetrates deeply, stands drouth mellows tbe sun, and the timothy grows much stronger and holds up the clover becondiy, if sown for pasturage, the tiractby almost universally prevents the clover trom "swelling" the cattle. Third ly, hay is too binding, especially for cattle, ana clover too succulent, hence both together are better than either al one.
