Grüne pder Wachsbohnen werden abgezogen pnd mit dem gewässerten Pökelfleisch jta genügender Wassermmge weich gekocht., Wenn beide halbgar, fügt man gewaschene, ungeschälte, zer Zchniüene Birnen hinzu und läßt sie initkochen. Das frische Gemüse und die süßlichen Früchte geben dem Pökelfleisch einen würzigen Ge ichmack. Man kann auch eine Ge ivürznelke beim Kochen hineinlegend ' Pökelfleisch mit Reii pberbacken. Der gewaschene RciS wird mit Wasser und Fettzusatz eingesetzt und mit dem klein geschnit tenen Pökelfleisch zu gleicher Zeit gar gekocht. Tann schüttet man die Speise in eine Auflausschüfsel. streut Kümmel darüber und gießt Fett, in welchem Zwiebel gebraten ist. dar uf. So läßt man das Gericht im eißen Ofen gelbbraun überbacken. Pökelfleischballchen zu Blumenkohl. Das gewässerte Pökelfleisch wird durch die Fleisch. Maschine gedreht und die Masse mit einigen gekochten, geriebenen Kar toffeln und Mehl zu festem Teig geformt. auS dem man Klößchen in ungesalzenem Wasser abkocht. Ein Kopf Blumenkohl wird gebrüht und n Wasser gar gedünstet. Nachdem man zur Soße einen Teil des WlumenkohlwassercS mit Mehl : an gerührt und dicklich gekocht hat, schmeckt man die Soße mit Salz, ! Vutter und einer Spur Pfeffer, auch etwas Zitronensaft ab, legt, den Blumenkohl in die Mitte der An richtcschüssel. füllt die recht heiß toße darüber und umkränzt das Gemüse mit den Fleischbällchen. ! Pinkelwurst oder Grütz wurst. 1 Tasse ganz feingehacktei Nierenfett, 1 Tasse Oatmeal. Y4 Tasse gehackte Zwiebeln, 1 ebene? Teelöffel Salz. V& Tcelösfel grob gestoßenen Pfeffer, Teelöffel ganzes Gewürz (Allspice), ebenfalls grob gestoßen, gut vermengen un! jte einen Muslinsack füllen, den mai . cn beiden E.nden bindet; wird auj den Kohl gelegt und ungefähr 1 Stunde mitgekocht. , BraunerKohlmit Kasta nten. 2 Köpfe braunen Kohl ver liest man sehr sorgsältig und wasch! ihn mehrere Male mit kaltem Was 4er ab; aufs Feuer stellen mit lo chendem Wasser, 2 Eßlösfel Fett. 1 Teelöffel Salz. V2 Teelöffel Pfesfe, und eine große, feingeschnittem Zwiebel, und läßt den Kohl fehl langsam IY2 Stunden kochen. V Pfund Kastanien . stellt man mit Wasser aufs Feuer, läßt 10 Minu ten kochen, abgießen und die Schall Abnehmen, sowie die braune Haut RochmalS aufs Feuer stellen, mit .Brühe vom Kohl, auch l Teelöffel 'Lucker, und langsam garkochen Wieder abgießen und mit Y2 Blos sei Butter oder Fett in einer Kasse lrolle schwenken. Beim Servieren !gibt man den Kohl in die Mitte ei ,ner Schüssel und legt die Kastanien, isowie kleine Bratkartoffeln darum Herum. ' ' Apfel . Tapioea .Pud d i n g ohne Eier. Vfe Tasse Ta pioca läßt man in 2 Tassen kaltem Wasser weichen, über Nacht ist om besten, damit die Körner ganz weich werden. 3 große, säuerliche Aepfel schält man ab, hackt sie sehr fein, fügt Vz Tasse Zucker und Tavioce dazu und läßt in einer Pudding form im Ofen backen, bis die Aepfel stückchen weich sind. Kann warn? oder kalt gegessen werden. Kompott von getrockne ten A e p f e l n. Psund. getrock ucte Aepfel wäscht man ab, läßt sie über Nacht weichen, setzt sie dann mit kaltem Wasser und Y2 Tassk Zucker auss Feuer und läßt 15 2Q Minuten koche MS sie weich sind.
