frost grape, or -winter grape; the
fruit ripong lato, and is very much
prized. It makes a beautiful arbor,
and itf perfectly hardy. It should bo
eoloctod and planted in tho grounds
this fall, or winter. Tho "musca
dine' or sweet-scented grapo is also
valuable.
Using Ripo Cucumbers
(Requested)
For a sweet pickle, take a bushel
of ripo, yellow cucumbers, peel, and
romovo tho seeds; cut them into
small, thin pieces and cover with cold
vinogar and leave for twenty-four
hours. Drain them, and throw the
vinegar away, as it is worthless. Mako
a rich syrup of one pint of vinogar
to seven pounds of sugar; add a table
spoonful each of whole cloves, stick
cinnamon and allspice, putting the
spiceo in small muslin bags. When
tho syrup boils up, skim, and put in
tho cucumbers and cook until they
aTo transparent. Then lift them Into
wido-mouth jars, pour tho boiling hot
syrup over them to overflowing and
seal air tight.
Sliced Cucumber Pickles Slice
thinly threo dozen largo yellow cu
cumbors and boil them for half an
hour in enough vinegar to cover them.
Meanwhile, into a gallon of cold vin
egar stir a tablespoonful each of
onion juice, ground horseradish, cin
namon, black pepper, ginger, half a
teaspoonful of paprika, a tablespoon
ful of celery seed and half a pound
of sugar. Drain tho boiled cucum
bers until free from vinogar and turn
thorn into tho spiced vinegar; put all
into tho kettle and simmer for two
hours, then put into glass jars and
seal.
' Raw Cucumber Catsup Take firm
yellow cucumbers, peel and grate
them into a bowl; salt a little, .and
put into a cheoso cloth bag to drain
over night. In the morning season
ccxto tasto with salt,, pepper, vinegar,
and other spices liked, mix Veil, arid
put into small jars, sealing tight.
This should be used during the fall or
winter, it will not keep longer. . If
preferred, tho mixture may-be boiled
lor live minutes,, and then scaled.
Cream Cucumber Sauce Peel and
slice two largo ripe cucumbers; drain
off any water that forms, without
pressing, letting it drip for a few
minutes. Have ready a chilled bowl
rubbed with onion; put the minced
cucumbers into It, season with white
popper, salt, a tonBpoonful of onion
juice and a tablespoonful of lemon
juice. Mix.- lightly with a silver fork
a cup of whipped cream into which
has been beaten with a pinch of soda.
Serve cold with fish. Or a French
dressing may be used, made. of two
tablespoonful of olive oil, one-third
as much lemon juice and a little salt
and pepper.
