Requested Recipes
Cabbage Sweet Pickle Select
four solid heads; pick off all loose
or poor leaves, cut out most of the
thick center of the stalk, removo
tho coarse, fibrous part, and shave
the cabbage as for slaw, or run
through a chopping machine.
Sprinkle with one cupful of salt and
let stand over night; in the morning
drain off tho brine. Have ready
four chopped onions which have lain
whole in brine for twenty-four hours,
and mix with the cabbage. Into two
quarts of strong cider vinegar, or
more, if needed, put twq tahlespoon
fuls each of mustard, celery seed,
whole cloves, allspice and black pep
per, one tablespoonful each of mace
and tumeric, adding a very little
ginger. Add to this two pounds of
brown sugar and two tablespoonfuls
of made mustard. Bring this to a
boil, put in the cabbago and cook
until tho heart of tho stalks Id ten
der, then put in airtight jars whilo
boiling hot.
A good cold dish, which is vory
inexpensive, may bo made by using
a cheap piece of flank or round steak
of beef in this way: Pound well,
and reason with salt and pepper,
spread with dressing of bread-,
crumbs, roll up tightly and tio close
ly with clean twine. Put this into
a kettle and boil rapidly for twenty
minutes, then set whero it will sim
mer for an hour. Then put it Into
a dripping pan with tho gravy from
tho kettle (which should have been
boiled down to a small quantity),
set in a hot oven and baste often
with the gravy. If it browns too
fast, turn another pan over it. Bake
until done, and a nico brown. Good
for slicing.
