Serve" with salad dressing thinned with pineapple juice. Serves four. TOMATO AHIMC IN KBITER I envelope gelatin ‘a c. cold water 2 c. tomatoes 2 hay leaves 134 tsp. salt 2 tbsp. vinegar 1 stalk celery, chopped 4 tsp. grated onion dash pepper 2 tbsp. lemon Juice Soften gelatin in cold water. Simmer tomatoes, bay leaves, salt, celery, onion and pepper for ten minutes. Strain. Dissolve gelatin in hot tomato mixture. Add vine gar and lemon juice. Set in cool place to partially congeal. Cut a thin slice from stem end of green pepper. Scoop out seeds and di viding membrane. Fill with aspic. Chill until firm; slice. Serve on bed of lettuce, endive or water cress. ASPARAGUS GOLDENROD. Arrange cooked asparagus spears on salad greens which ? have been tossed in French dress- | ing. Top with finely chopped hard-cooked eggs. Serve with; French dressing. BEETS WITH I.EMON SAUCE. 2 tbsp. lemon juice 2 tbsp cooking oil 1 tbsp sugar salt 2 c. sliced, cooked beets Combine lemon juice, oil, sugar and sail in saucepan. Add beets and heat thoroly. Four servings. FRITTERS. 1 e. flour 1 tsp. salt 2 eggs 34 c. milk 1 tbsp. melted shortening Beat eggs. Add milk, fat, salt and flour. Beat with rotary beater until smooth. Dip prepared vege tables into batter. Drain off ex cess. Fry in fat heated to 375°, four to five min., depending on size of pieces Makes 1 c. batter. Use slices of eggplant, flowerlets of broccoli, or sliced ripe to matoes. CARROT COOK IKK 2 c. sifted flour 2 tsp. baking powder 34 tsp salt \ e. shortening 34 c sugar 1 e. mashed carrots 34 tsp. vanilla Sift flour, baking powder and salt. Cream shortening and sugar together. Add vanilla and carrots. | Beat well. Add dry ingredients and mix thoroly. Drop from tea spoon onto greased cookie sheet. Flatten each slightly with fork. Bake in moderate oven (350°) 12 to 15 minutes. Frost immediately with a mixture of 1 tsp. orange rind, 2% tbsp. orange juice, 1% tsp. butter and enough confec tioners’ sugar to thicken to spreading consistency. About four dozen cookies. CUCUMBER SALAD. Peel cucumbers and chill. Dice and combine with sliced onions or shredded lettuce. Serve with the following dressing. SOUR-CREAM SALAD DRESSING. 1 c. sour cream 1 tbsp. lemon juice dash of eurry powder salt Whip cream. Add lemon juice during the whipping. Season with salt and curry. RING MOLD SALAD. 1 envelope gelatin 34 e. cold water 1 c. boiling water 1 tbsp lemon juice 3 tbsp. vinegar 1 tbsp. sugar 2 tbsp. grated onion 2 c. diced vegetables 1 tsp. salt Soften gelatin in cold water. Negroes find it almost impossi ble to eat in a public place in Des Moines, Mrs. Weertz said. “Negroes are given no service— merely ignored.” On the good side, Mrs. Weertz said there is no discrimination in the public schools or in Drake uni versity. Business and commercial schools, except one giving courses two nights a week, are closed to Negroes. Two local hospitals admit Negroes for medical or nurse training, she said. All hospitals are open to Negro patients and Negro doctors. In religion there is no prejudice. Some places of recreation bar Negroes, but such places as the theaters, Salvation Army and and Scout camps, the Y.M.C.A. and Y.W.C.A. do not discriminate.
