Mrs. America Marshall, for
merly of Lincoln, arrived in the
city from New York, where she
has made her home for the past
several years. After a week’s
visit here with friends, she will
spend the summer at Steamboat
Springs, Colo.
Mrs. Marshall will make her
home in Santa Barbara, Calif.,
this fall after visiting her daugh
ter, Harriet, whom she has not
seen since 1936. Harriet, also a
former Lincoln girl, lives in Oak
land.

Miss Gertrude Jackson of
Omaha was the houseguest of
Mrs. William B. Davis over the
week end.

the home of Mrs. R. C. Brooks is
Mrs. Mayme Moore, a teacher in
the Atchison, Kansas, school sys
tem. Mrs. Moore is enrolled for
the summer session at the Uni
versity of Nebraska.

their daughter, Betty Rose, were

signed her position with State
Unemployment Insurance and has
returned to Omaha. She spent
about six months here.

Meeting of the Missionary society
to be held in Omaha Friday,

Amaranth Chapter, O. E. S. Sun
day at the Urban League. Rev.
Roy Handy brought the main
message. Ass’t. Matron Frances
Lewis gave a reading, “Esther.”
Mrs. Izetta Malone, Past Matron,
and Miss Elois Finley sang. Mem
bers of the Lebanon Lodge No. 3,
A. F. & A. M., Cornhusker Lodge

were special guests for the occa
sion. Miss Eyelyn Edwards ar

member of the State Federation
of Club Women this week and
will attend the meeting in
Omaha June 27 to 29th. There,
Mrs. Maxine Walker will give a
reading and Mrs. Dorothy Dean
will sing a solo. Mrs. Hortense
Cutliff was accepted into the club
at the last meeting. Mrs. Claudia
Collier will be the group’s next
hostess.

Are Parents
Mr. and Mrs. Calvin Rodgers are
the proud parents of a baby girl,
Carolyn Gwen, that arrived on
June 11th. Mrs. Rodgers, nee
Bettye Tarpley, is at St. Eliza
beth’s hospital.

Recipes
Coconut Pie
4 eggs slightly Juice of 1 lemon
beaten 2 c. grated, or
c. sugar ground coconut
2 c. coconut milk. 9-inch unbaked
or milk pastry
Beat eggs and sugar together.
Blend in liquids. Put coconut in
bottom of pastry shell. Pour cus
tard over top. Bake in a hot oven
(450° F.) and bake 30 min. longer,
until set. Yield: 6 servings. If de
sired, top with meringue, sprinkle
coconut over the meringue, and
return to a moderate oven (350°
F.) to brown.
Dream Bars
% c. butter or H c. brown sugar
margarine 1 c. sifted flour
V6 tsp. salt
Mix above ingredients well and
pat into ungreased 9xl2-inch pan.
Bake 15 min. in moderate oven
(350° F.) or until slightly brown.
Blend following ingredients and
spread over above layer:
1 c. brown sugar % tsp. salt
1 tsp. v&nllla 1% c. shredded
2 eggs, well beaten coconut
2 tblsp. flour 1 c. (Shopped walnuts
ft tsp. baking or pecans
powder
Bake 15 or 20 min. in moderate
oven (3508 F.). Cut while still
warm. Yield: 30 lx2-inch cookies.
Sauces for Fish
Horseradish Cream Sauce
l c. thick sour • c. bottled
cream, or horseradish
1 c. sweet cream, * % tsp. salt
and -% tsp. pepper
2 tblsp. lemon juice
Whip cream until stiff. Mix horse
radish, salt and pepper (and lemon
juice if using sweet cream). Fold
into whipped cream. Yield: 2 cups.
Quick Tomato Sauce
2 tblsp. butter 1 e. milk
2 tblsp. flour % tsp. Worcester
% tsp. salt shire Sauce
% tsp. prepared % c. grated
mustard sharp cheese
Dash of cayenne 1 tbsp. lemon juice
Melt butter in double boiler; stir
in flour, salt, mustard and cay

enne. When well blended, add milk
slowly, stirring constantly over
low heat until mixture thickens
and boils. Add Worcestershire
Sauce, cheese and lemon juice.
Heat until cheese is melted. Yield:
1% c.
Quick Seafood Sauce
% c. bottled H c. mayonnaise
chill sauce _ ^
Tartar Sauce
1 c. fresh mayonnaise 1 tblsp. chopped
1 tblsp. onion Juice olives
1 tblsp. chopped 1 tblsp. chopped
pickle parsley
Blend ingredients together. Yield:
% c.
Combine ingredients and chill
thoroughly. Yield: 1% c.
Cheese Souffle
4 tablespoons flour
% cup butter or margarine
1% cups milk, scalded
1 teaspoon salt
6 eggs, separated -
% pound grated cheese
Melt the butter or margarine.
Blend in flour. Gradually add
scalded milk and salt. Cook
slowly until thick. Add cheese
and cool. Gradually stir into
beaten egg yolks. Fold in stiffly
beaten egg whites. Pour into a
greased casserole and bake for •
one hour at 325 F.
