Nut Macaroons
2 egg whites
cup granulated sugar
Vi teasp. salt
1 cup ground nuts
vi teasp. almond flavoring
Beat egg whites until quite stiff
then gradually add sugar while
continuing to beat until stiff and
sugar is dissolved. Fold in salt,
ground nuts, and almond flavor
ing. Drop mixture by tablespoon
onto ungreased cookie sheet, a
bout 1” apart. Bake in moderate
oven of 350° F. for 15 to 20 min.,
or until dry and slightly brown
at edges. Remove immediately.
Makes 18.

Potato Pancakes
Shortly before serving time,
pare 1 Vz lbs. raw white potatoes;
grate on fine grater. Into 3 cups
grated potatoes, stir 1 grated
small onion, 1 unbeaten egg, 5
tablesp. flour, 1 teasp. salt,
teasp. pepper. Heat L4,? fat in
medium skillet. Drop potato mix
ture by heaping tablespoonsful
into hot fat. Fry until crisp and
golden-brown on underside; turn,
brown other side. Makes 16.

Tossed Apple Salad Bowl
2 raw apples, unpeeled
2 peeled oranges
l4 cup peanuts, chopped
2 teasp. minced onion
2 cups finely shredded, raw green
cabbage.
4 cup French dressing
Cut apples into small wedges.
Separate oranges into sections.
Combine with next 3 ingredients.
Just before serving, add dressing
and toss well. Makes 4 servings.
For two, halve ingredients, and
make as directed.
Orange Cake
Flour, enriched. 1 Cup
Baking powder, 14 Teaspoons
Salt. 4 teaspoon
Shortening. 4 cup
Sugar, 4 cup
Egg. 1
Orange rind, grated, one teasp.
Orange juice, 4 cup
Sift flour, measure. Add bak
ing powder, salt and sift again.
Cream shortening and sugar to
gether until light and fluffy. Add
egg and orange rind: beat welL
Add orange juice and dry ingre
dients: stir until well blended.
Turn cake batter on top of apri
cots or blueberries. Bake in mod
erate oven (350° F.) one hour or
until cake springs back when tap
ped with finger. Turn on heat
proof platter at once. Serve warm
or cold. Makes 6 servings.
