meat aro moro nutritious than tho coarser
portions, coupled with an almost iusuiwrablo
prejudice among working pcoplo ngainat
stowed food. This prejudice Is doubtless due
to tho tastoloss quality of boiled meat; boil
ing toughens each of tho fine fibers, nnd de
prives tho meat almost wholly of Its dlstino
tlvo flavor.
All these blunders nnd misconception must
ovldently bo removed before any truo art of
cooking can iK-come common practice. Tho

a stove or oven In which neither meat nor
bread can bo overcooked, dried up or ren
