The mini of tho early spring have ceased, and troo and flower havo sud denly bunt Into bloom, Tho air is filled with the perfume of the hyacinths that aro so plentiful in tho pnrkit, and tho lilacs, dande lions and snowballs insert their rich colors in the most radiant spring kaleidoscope to be seen In tho United Btatea The grounds sur rounding the White House aro beautiful In design and coloring, and tho spectacle of thousand of children dancing over them, bathed In tho warm light of tbo spring sun, is oh of exquisite plcturesquenoaa, Tho groups of toddlers extend as far over as tho Washing ton monumont, which looks llko a gigantic marble finger pointing Into space. Most of the children are with the parent or nurses, bat it requires the most careful watching to keep the young ones from getting lost la the ever moving crowd. The children, most of whom are provided with a llttlo fancy basket of variously colored eggs, roll them down the. slopes of the many mounds on the grounds, ad when, they are broken they distribute them among the numerous ragged bootblacks and homeless urchins who, stand around and eat an enormous number of eggs without turning a hair. In this common playground all distinctions of race, color and previous and present con dition are rased to the earth. The before mentioned affluent tots will roll and romp and crack eggs with the contingent from Toddledoen In Swampdoodle (one of Wah lagton's rough spots), and before the day Is over their mothers are talking confidentially together, comparing the various points of their progeny. The lady of the White Bouse usually min gles with I he children for as hour or so on Easter Monday. Nellie Arthur, the daugh ter of the late ex-President Arthur, used to take part In the egg rolling games herself. Mrs. Cleveland always made It "a point to be among the children on the White Lot on Easter Monday, and would amuse them and coddle and coax them with a skill that was theadmlraUonof all the newspaper corre spondent In. Washington. The spectacle of this most beautiful of White House mistresses carrying a Uttl ragged girl on her shoulders, or taking a haachof violet from her dress to give to a Mstto boy.wbo asked for them, would make striking enough pictures to hang on the walla of the executive mansion. When Gen. Grant was president be used to strol out to a bench In the White Lot, where he would sit, puflmg at a cigar and watching the antics of the children. Tho fun 1 kept up without cessa tion from early morning' until darkness be gins to fall, when tho children, thoroughly played. v, but with a healthy glow la their cheeks, are marched off to home and to'bedi It tikes some days for the gardeners of the White House to clear the grounds of egg hell, It is not in the White Lot alone that these Easter egg rollings take place, but in all of the larger parka of the city. Tho Interior I filled with material of a veryvlch plum cake, with plonty of candled lemon peel and other good things. They aro mado up very stiff, tied up in a cloth and boiled for sovcral hours, after which thoy are brushed over with egg nud then baked. When ready for tale tho crust i as hard as If made of wood, a clrcumstanco which ho given rlso to various stories of tho manner in which thoy have at times been treated by persons to whom they were sent as presents, and who had never seen ono before, ono ordering his simnei to no ooiiou to sorten it, and a lady taking hers for a footstool. Thoy aro tnodo of different sixos, as may bo supposed from tho ingredient. Their form, v. hlch, as well a tho oniaraentatlou, I nearly uniform, will bo boat understood by tho accompanying en graving, roprenontlng tho largo and small cakes. Ono of tho most curious thing about tncsp cake aro the tales which havo arisen to explain how they first got their name. Bomo pretend that tho father of Lambert Slmnel, tho well known pratendor of tho rclgn of Henry VII, was a baker and tho first maker of simuols, and that in consoquenco of tho celebrity ho galued by tho act of hi son his cakes have retained his name. But a much more curious story i ono that I current In Shropshire, It seems that long ago thero lived an honest old couplo, boast ing the names of Simoon and Nelly, but their surnames aro not known. It was their cus tom at Easter to gather their children about them and thus moot together onco a year under tho old homestead. Tho fasting season of Lent was Just ending, but thoy had still left some of tho unleavcnod doagb which had been from time to timo converted into broad during tho forty days. Nelly was a careful woman, and it grieved her to waste any thing, ao sho suggested they na tho remains of tho Lenten dough for tho basis of a cako to rogalo tbo assembled family. Simeon readily agreed to tho proposal, and further reminded his partner that there were still some remains of their Christmas plum pudding hoarded up in the cupboard, and that this might form tho Ulterior and bo an agroeablo curprlso to the young people when they had nuulo their way through tho less tasty crust. So far, all things went on harmoniously, but when tho cake was made a subject of violent discord arose, Sim Insisting that it should bo boiled, while Nell no leva obstinately contended that it should bo baked. The dispute ran from words to blows, for Nell, not choosing to let her province in the household bo thus Interfered with, Jumped up and threw the stool sho was sitting on at Sun, who on his part seized a bcaotn and ap plied it with right good will to tho head and shoulders of his spouse. She now seised the broom, and the battle became so warm that it might havo had a very serious result had not Nell proposed as a compromise that the cake should bo boiled first and afterwards baked. This Sim agreed to, for ho had no wish for further acquaintance with the heavy end of the broom. Accordingly, tbo big pot was set on tho fire nntl tho stool brokon up and thrown on to boll it, whilst tho besom and broom furnished fuel for the oven. Bomo eggs which had been broken in the scuffle were used to coat the outside of tho pudding when boiled, which gavo it tho shining gloss it possesses as a cake. This new and remark able production in tho art of confectionery became known as tho cake of Simeon and Nelly, but soon only the first half of each bum was preserved and Joined together, and it has ever slneo been known as the cake of QimneL XH.NKL CAKXa. These are by no means the only sources from which the name Is said to be de rived. It is found in early English and also In French, and it appears in mediae val Latin under tho form of tlmanellus or stmlnellus. It i considered to be derived from the i.atln, simila, fine flour, and la usually Interpreted as 'meaning the finest kind of white' bread kmade In the middle ages. It Is evidently used, how ever, by the mediaeval writers to mean a cake, which they called In the Latin of that time artocopus, which is constantly explained by slmnel In tho Latin-English vocabularies. At any rate this' cako Is certainly of very aneieat origin, and it is a very curious custom which baa been handed down for so many genoratlona Easter Emblems. Now the egg Is glorified.
