2. Reasons for the change in
boundaries is to provide more ad
equate education advantages for
the children.
3. The said plan or reorganiza
tion proposes the adjustment of
property, debts and liabilities of
the proposed District as follows:
a. All of the assets and pro
perty of the districts in
cluded in this plan as of
July 14, 1961, shall become
the property of the proposed
School District.
b. All of the bonded indebted
ness existing against any of
said districts is to be as
sumed and paid by the new
district.
c. All other School District
debts, if any, of said Districts,
as of July 14, 1961 are to be as
sumed and paid by the new,
district.
d. The utilization of existing
school houses and school pro
perty is to be determined by
the legal voters of the pro
posed new school district,
in the event such reorganiza
tion becomes effective. How
ever, this shall pertain to
school houses and school
grounds only.
Legal school electors only re
siding within the enumerated dis
tricts shall he permitted to vote
at said election, and the legal
electors residing in school dis
trict No. 30, shall be entitled to
vote as a separate unit at said
election.
Any electors or other interested
persons, may secure additional
information concerning the de
tails of said proposed plan of re
organization at the office of the
County Superintendent of Schools
in O’Neill, Nebraska.

Do you eat eight pounds of but
ter, eight pounds of cheese and
eighteen pounds of ice cream
each year? If you do, you are av
erage. If you don’t, June is a
good time to check up on the
dairy foods you eat. Jane—you
may have heard, is dairy month.
Today, lets get acquainted with
sour cream—the dairy or cultur
ed sour cream for years, but not
the mild, flavor able product now
available in the dairy case.
Homemakers who have cream
and wish to have a product sim
ilar to the dairy sour cream can
make their own. Ask your Home
Agent for a copy of the bulletin
“Sour Cream”.
Sour Cream heightens the taste
of the most ordinary foods. It
has a sharp flavor, yet the
smooth texture and buMerfat
found in sweet cream. The cream
is an excellent source of vitamin
A and the fat is readily and eas
ily digested.
How to Use Sour Cream
Where it is not to be cooked,
SOUR CREAM can be made stif
fer by whipping. Care must be
taken not to overwhip the cream,
or it will churn ;ind turn to but
er. For the same reason, and to
hasten whipping, the cream must
be kept cold while being whipped.
Because one cup of heavy sour
cream contains part fat, (about
six tablespoons) it can be used to
replace part or all of the fat call
ed for in recipes for pancakes,
biscuits, cakes, etc., as well as
to replace the milk. In batters re
quiring a high percent of liquid
the heavy sour cream may con
tain more fat than the amount
called for in the original recipe,
and a richer product will result.
In baked products, soda may
be used as all or part of the leav
ening agent in the proporation of
teaspoon of soda to 1 cup of
sour cream. This sour cream
can be used in the same way as
rich sour milk
The following recijies have been
popular with guests at our house.
Mary Carey of the Dairy Coun
cil in Lincoln provided the follow
ing coffee cake recipe.
Sour Cream Coffee Cake
1% cup butter
1 cup granulated sugar
2 eggs
2 cups sifted all-purpose flour
1 tsp. baking powder
Vjl tsp. salt
% pint dairy sour cream
1 tsp. vanilla Topping
Vi oup brown sugar, firmly
pacnea
V* cup white sugar
1 tsp. cinnamon
1 cup pecans, finely chopped
Preheat ove n to 325"F. Cream
butter and sugar. Add eggs, one
at a time, beating well, Sift dry
ingredients togeher. Add to
creamed mixture alternately with
sour cream, beginning and ending
with flour. Stir in vanilla. Pour
half of batter into buttered 9x9
inch baking pan, cover with half
of nut topping, pour remaining
hatter over filling and top with
rest of nut mixture. Bake approxi
mately 40 minutes.
Mrs. Harden Anspach brought
the following salad recipe for our
salad bar during our salad dem
onstration.
Gold—Flake Dessert Salad
1 cup pineapple, pieces drained
1 cup orange segments, or man
darin orange sections -
1 cup flaked coconut
1 oup tiny marshmallows
1 cup commercial sour cream.
Mix all ingredients togoflier and
chill several hours. Use as salad
or dessert.

REPORT OF MONDAY’S HOG AUCTION
Top on butchers rose to $18.40 with the mixed No. 1 and No.
2 grade hogs selling from $18.00 to $18.35. Sows sold in a range
of $12.00 up to $16.35 depending upon weight, quality, and smooth
ness. About 150 head of cattle of all classes sold at the Monday
auction.
He had a very large run of higs for a summertime sale. More
and more consignors each week are taking advantage of the
