ROYALTY RICE MOLD
1 package watermelon-flavor gelatin
1 cup hot or boiling water
2 taolespoons lemon juice
lYi cups cold cooked rice
Yt cup chilled evaporated milk
Y» cup chopped pecans
Dissolve gelatin in hot water; add 1
tablespoon lemon juice. Chill until
lukewarm; stir in rice and chill until
thickened but not set. Add remaining
lemon juice to chilled milk; beat until
stiff. Fold in thickened gelatin mix
ture, and nuts. Turn into 1J* quart
mold and chill until firm. Makes 6 to
8 servings.
