Chili Ham Dish
A Hearty Main Dish
Suggests O. Parkinson
Here’s a hearty main dish to
cook over the backyard grill or on
top the kitchen range one warm
evening soon Called chili ham, it
is a sdumguliion type of dish re
commended to us by Owen Park
inson, local salesman of the Mea
dow Gold Dairy, for those lazy
days when elaborate cooking does
n’t appeal.
The dish contains all the essen
tial nutrients though, according to
Beatrice Cooket, director of the
company’s Chicago test kitchens
where the recipe was created—rice
for your carbohydrates, ham for
ybur protein, nd skim milk for
your dairy food. Buttery bread and
crisp relishes will round out the
meal.
Chili 11am Dish
(Four-Six servings)
3/4 cup uncooked rice
2 tablespocns butter
1 small onion, chopped
1 teaspoon salt
2 teaspoons chili powder
2 cubes cubed cooked ham
1 No. 303 can red kidney beans
2 *s cups skim milk
Cook rice in butter until lightly
browned. Add onion and cook 5
minutes. Stir in seasonings. Add
ham, kidney beans and skim milk.
Cover; cook over moderate beat,
stirring occasionally, until rice is
tender (About 20 minutes for pre
cooked rice.) Add more skim milk
if rice is too dry.
