The recipe came from Rex Stowell, local salesman of the Meadow Gold Dairy, who suggests it as a practical way to use those last pieces of New Year’s ham combined in cheese sauce. The recipe was created by Bea trice Cooke, director of the com pany’s Chicago test kitchens. ’ Savory Ham and Potato Casserole (Six servings) 2 tablespoons butter 1 medium green pepper, chopped 1 small onion, chopped 3 tablespoons flour 1 teasptwn salt 1 cup milk >•2 cup grated natural cheddar j cheese | 2 cups pared, sliced potatoes ! 2 cups cubed, cooked ham j 3 slices crisp bacon, diced | Vi cup crushed corn flakes Cook green pepper and onion in i butter until tender. Stir in flour and salt. Gradually add milk and ! cook until thickened, stirring con i stantly. Add cheese and stir until melted. In a buttered IV2 quart! casserole, alternate layers of po- | tatoes, ham, bacon and cheese j sauce. Top with crushed com flakes.
