received his discharge from the
army and is visiting his parents
at their home in Atkinson.
Kenny served as a mechanic
with the air force, and has been
stationed in England the past 32
months. He plans to enter a ra
dio and television school in Oma
ha. He formerly lived with his
parents in Amelia and attended
school here. His mother was the
telephone operator in Amelia at
that time.

a forgotten meat specialty, be
cause It must be prepared, on
request, by your meat retailer.

suggests serving the pork crown
roast during the Thanksgiving
season.
Your meat retailer will fash
ion the pork crown roast from
two 7-rlb center cut loins. Have
the ends of the rib bones
frenched . . . this will give you
a chance to decorate the roast
with paper frills.
Either an apple-herb or chest
nut stuffing would be an excel
lent choice to fill the center of
*, the roast. For the garnish simply
use a few spiced pears on the
platter.

Before roasting tha pork
crown, season the meat with salt
and pepper. Then plaoe tha
crown roast, rib ends down on
a rack In an open roasting pan.
Do not add wmtar and do not
cover. Rout In a moderate ovsn
(350* F.) for 1 hour.
Then remove the roast from
the oven, and Invert It so tha
rib ends are up. Now la the time
to add the stuffing. Then Insert
a roast meat thermometer lnta
the thickest part of the roast,
being careful that It doesn’t raat
In fat or on bone. Continue
roasting In a moderate oven
until the thermometer registers
185* F. Allow about 40 minutes
per pound for roasting.
