Grape, Pear Conserve Suggested
By BLANCHE SPANN PEASE. Homrmakliu Editor
Somehow or other, September
is just slipping through our fin
gers. Most homemakers are still
very busy. The youngsters are
back in school and most of us
are still putting up odds and ends
of good things to eat this winter.
With grapes on the market, you
might like to try putting up a
few glasses of grape conserve, i
This recipe makes 14 six-ounce
glasses.
GRAPE CONSERVE
Four pounds grapes, eight cups
sugar, three medium-sized or
anges, two lemons, two cups wal
nut meats (broken).
Wash grapes, separate skins
from pulp. Cook pulp until soft,
sieve to remove seeds. Add skins,
stir in sugar. Juice orange and !
lemons. Thinly slice orange and I
lemon peels, cover with cold w'a- \
ter and heat to boiling. Drain, add
to grape mixture with fruit juice, j
Cook until thick, about 40 min
utes. Add nutmeats, seal in hot
sterilized jars. Makes 14 six
ounce glasses.
PEAR CONSERVE
Pears are rather mild so, mixed
with this combination, you’ll find
you have a delicious spread.
Twelve medium sized Bartlett
pears, one 14-ounce can (IV2
cups) pineapple tidbits, one or
ange (juice and grated peel), 8Vi
cups sugar, one three-ounce bot
tie maraschino cherries.
Chop the pears and pineapple,
add orange juice, peel and sugar.
Let stand overnight. Next morn
ing cook slowly until thick, about
2hours. Add chopped mara
schino cherries. Seal in hot ster
ilized glasses or half-pint jars.
Here's a piccalilli recipe that is
distinctly different and you
might like to put up a few pints
for a variety of relish.
SUNSHINE PICCALILLI
Eighteen medium carrots, six
medium cucumbers, two large
green peppers, six medium on
ions, two sweet red peppers, two
cups white vinegar, 3Vz cups su
gar, one teaspoon celery seed, one
teaspoon white mustard seed.
Grind vegetables through me
dium blade of food chopper. Com
bine ground vegetables with re
maining ingredients in large ket
tle, and heat to boiling. Simmer
15 minutes. Seal in hot sterilized
jars. Makes about five pints. Use
with hamburgers.
SPICED PEACHES
Ten medium peaches, six table
spoons finely chopped Bermuda
onion, two teaspoons ground cin
namon, five cups sugar, 1 cups
water, one cup white vinegar, 12
whole cloves.
Scald and peel peaches, remove
pit through the stem end, leav
ing peach whole. Combine chop
pod onion and cinnamon Fill the
poaches with this mixture. If you
use halves, toothpick them to
gether. secure with string. Com
bine sugar, water, vinegar and
cloves. Heat to boiling Cook
peaches in this syrup until ten
der. It takes about 20 minutes.
Pack in hot sterilized jars, fill
with hot syrup to within half
inch of top. Seal. It should make
four pints.
GRAPE AND PEAR JAM
Two pounds ripe Concord
grapes, one cup water, two
pounds ripe pears (about six),
3 *2 cups sugtar, cup lemon
juice.
Wash grapes, separate skins
from pulp. Cook pulp in water
until soft. Sieve to remove seeds.
Combine pulp and skins, measure
(should be about 3'-j cups fruit).
Pare pears, slice. Add pears, su
gar and lemon juice to grapes.
Mix to dissolve sugar. Simmer
until thick, about 30 minutes,
stirring frequently. Seal in hot,
sterilized glasses. Makes four
small glasses.
