Scar in hot fat and add the water. Cover. Simmer slowly until the meat is tender. If de sired, 1 cup of tomatoes can be substituted for the water, or % cup of water may be used with the browned steak and 1 cup sour cream added after 30 minutes cooking is completed. Now, how’s that? Three different ways of fixing swiss steak. Shank or shin is honey and gristly and may be used for soup or stew. Chuck or clod (part of the chuck) may be used as pot roast, braised beef, casserole dishes or boiled. Creole Cumbo 1 pound brisket, diced; 2Vi cups okra, 1 bay leaf, 3 sprigs chopped parsley, one-third cup cooking fat, V4 onion, chopped, % pound ham, diced; 2 cups canned tomatoes, 6 cups boiling water, 2 tablespoons flour, salt, pepper and caynenne, and 1 green pepper chopped. Brown the ham and brisket in cooking fat. Remove meat. Brown the onion and okra in hot fat. Add flour slowly. Stir until blended. Add meat and remaining ingredi ents, stirring constantly. Season to taste. Cover. Simmer slowly until meat is tender. Serve hot with steamed rice. This serves 12 people. If your family is not large cut the recipe down. The rump is solid meat, juicy and of good flavor. Use as pot roast, braised, stewed or boiled. Pot Roast 3 pounds of rump, chuck or shoulder; one-third cup suet, Vk cup hot water, rilt and pepper and flour. Rub the meat with flour, salt and pepper. Melt the suet in a heavy kettle or dutch oven. Add meat. Sear. Add water. Cover tightly. Cook slowly about 4 hours or until tender. More water may be used if necessary. This will serve eight people nicely. The upper portion of the aitch bone is solid meat, good quality. Use it as a roast, braised or stowed. The upper portion of the round is fairly tender. Use the round as roast, pot roast or stea|L Braised Beef 3 pounds chuck, round or shoul der, one-third cup suet, 2 table spoons chopped onion, 2 cups diced potatoes. Mi cup boiling water, salt and peppei. 3 cups diced carrots, 1 cup cooked tomatoes and flour. Rub the meat with salt, peppei and flour. Melt suet in heavy ket tle. Add meat. Sear. Add water. Cover. Cook slowly until the meat is tender. Add vegetables. Cook until tender. This will serve eight people. The brisket may bh eitner fat or lean meat of coarse quality. Use k boiled, stewed, in soups, corned or as pot roast. Steaked Spaghetti Ml pound cheese, grated; 1 large onion, chopped; 1 pound round steak, have your butoher grind it 1V6 cups tomato saup, 2 cups chop ped green peppers, 2 cups cooked spaghetti or macaroni. Salt and pepper. Combine the cheese, onion, soup, steak, peppers, and spaghetti or macaroni. Season to taste. Mix thoroughly. Pour into a baking dish. Bake in moderate oven of 375 degrees for about 45 minutes. Serves six. Minutes of Meetings of the County Board O’Neill, Nebraska, September 29, 1937, 1:00 P. M.
