A simple, Inexpensive loaf which may bo served hot with a brown or tomato sauce or sliced cold Is the following : T like one pound each of fres?h pork and round steak chopped fine, add two tenspoonfuls of salt, one beaten egg, one cupful of strained tomato, a teuspoonful of chopped parsley and a small onion fine ly minced. Brown the onion In a little of tho pork fat, season with pepper and add all tho other Ingredients with a cupful of crumbs. Mix well nud form 'n n lonf. Remove the loaf and make a iuuee with tho fat, stirring In it table spoonful or two of Hour, adding toma to Juice or water or soup stock of any kind. Ham and Noodles. Beat an egg and add one cupful of milk, pour over the dish. Cover with crumbs, dot with butter nnd bake In a moderate oven. Mock Duck. This Is to be served old. A few cupfuls of raised dough saved from tho bread making, may form n busts for many kinds of cakes and sweet breads. For u sweet loaf, which Is easily mnde, tnke fwo cupfuls of light raised bread dough. To this adtl one beaten egg, ndd a half cupful of shortening, the sume of sugar, chopped fruit or nuts, or boih with spices to tnsto. Cut In tho shortening nnd other Ingredients, using two knives as In milking pastry, then pour Into ii well-greused angel food pun or bread pun nnd let rise until light. Sprinkle with sugar mixed with elnnninon and bake In it moderuto oven, flour will lie needed to bundle the dough, us it should not bo sticky. This mixture makes a good coffee enke. with Hour added, and plnced In nn oblong pan spread with butter, sprinkle with cinnamon mixed with sugar nnd when light bnke In a hot oven. Apples cut In eighths plnced in rows on top of n coffee cake before It bus risen and sprinkled with sugar nnd clininmon give variety. Cinnamon Rolls. Take two cupfuls of light bread dough, add a half cup ful of sugar nnd four tublespoonftils of shortening, cut Into the mixture un til well blended. Boll out, adding flour to bundle, then spread with butter, sprinkle with brown sugar and cinna mon, roll up nnd cut In small rings. Place to rise on n baking sheet, brush with white of egg nnd dust with sugur Just before linking. Raised Doughnuts. To three cup fuh of bread dough ndd one well-bent-en egg, three-fourths cupful of sugar, four tnblespoonfuls of shortening, one tenspoonful of grated nutmeg or n mixture of nutmeg and elnnninon. Cut in with two knives until thoroughly mixed; ndd Hour to roll. Boll to one fourth Inch In thickness, cut In shapes nnd let rise until light. Fry In fat which will brown a cube of bread In 00 seconds. For filled doughnuts cut the enkes with a cooky cutter, plnoo a teuspoonful of Jam In the center and moisten the edges with water, fold over and press the edges together. Let rb;e until light nnd fry as usual. Place two tublespoonftils of powdered sugar lu n bug nnd dust them ono nt a time beforo serving. When one has u small amount ot meat a good dish may be prepared combining It with cggH such as: Meat and Egg Toast. Cut rounds of bread and fry them. Mlnco fine any meat or put It through the grinder. Beat two eggs, take two table spoonfuls of butter, half a cupful of tomato suttee, two tublespoonftils of milk, salt nnd pepper. When tho eggs begin to thick en add the tomato and chopped incut Stir until thick, then pour over the toast and serve. Ham En Casserole. Cover nn Inch slice of hirtn, shaped to fit u casserole, with sliced potatoes which have been parboiled five minutes, add two cui fuls of milk, a few dashes of poppet and cook uncovered for nn hour. Cover and cook slowly for another hour. Use two nnd one-hulf clipfuls of potatoes for this dish. Serve from the cas serole. Another good dish quite similar Is prepared by putting u layer of pota toes In u casserole, sprinkle with onions and cover with four to six pork chops. Add enough witter to keep them moist until the potatoes nro nearly done. Cook covered at first, season well with salt and pepper. Bemove tho cover and brown the chops. Coconut Pudding. Soak half u cup ful of bread crumbs in one cupful of milk, cream one tablespooiiful of but ter with half a cupful of sugar, add two well-beaten eggs, the snaked bread crumbs and one grated coconut. Oronse u linking dish with butler, put In tho mixture, set the dish In a pan of hot water and bake until a silver knife conies out clean. Let cool grad ually and serve cold. Eggs Sur Le Plat. Beat the white of eggs until stlfT, spread on u but tered plotter atul make hollows In tho egg with n spoon.
