cooked onions in a baking dish, n lay

then another layer of each finishing
with a .layer of ,buttered crumbs on
top. Bake until the crumbs nro brown.
Use a good flavored, rich cheese, other
wise baking It will make it stringy.
Onions roasted with their skins on,
arc delicious, peeled and served with
butter, salt and pepper.

over sufficient cream or
rich milk to moisten

French Baked Fish Stuff the fish
with plain bread dressing, .seasoned
well with salt and pepper. If there
Is any left arrange It around tho fish.
Pour over the fish a can of .toma
toes, tdd a finely minced clove of gar
lic, add butter, salt and pepper, with
a dash of cayenne. Bake until ten

Minced Chicken With Green Pep.

ing water nnd icook ten minutes;

narrow strips, using a pair of scis
sors. Melt two tablespooufuls of but
ler, add one and n half tablespooufuls
of flour, stir until well blended, then
pour on two-thirds of a cupful of
liquor In which tho chicken was
rooked. Bring to a boiling point, add
a cupful of diced chicken nnd the
peppers; again boll and serve on
pieces of toast.
Chicken Victoria. Cream two tnblc-
apoonfuls of chicken fnt with three
hard-cooked egg yolks, add a fourth
f a cupful of cracker or bread
crumbs souked In a fourth of a cupful
f milk fifteen minutes. Pour on grad
ually one cupful of hot chicken stock
snd when boiling add a cupful of

Ice Cream In Cases. Bako angel
food In a round tin. Removo tho top,
tuke out tho center and fill with vanil
la ice cream; cover with whipped
cream or crushed fruit nnd servo nt
once.
Braised Tongue. Oook a beef tongue
slowly until tender, with a sllco of
onion nnd a bay leaf added to the
water while cooking. Removo tho
tongue; skin It and plnco It In a cub-
scrole; add tho water In which tho
tonguo was cooked thickened with
three tablespoonfuls each of flour and
butter mixed; add a pint of stowed
tomatoes, strained, a small carrot
chopped, a clovo of garlic, half a table
spoonful of Worcestershire sauce, a
fow dashes of red pepper and simmer
with tho tonguo for two hours. Servo
from the casserole.
Roquefort Salad. This is a most de
lightful salad for Roquofort lovers
Take a crisp head of lettdce, well
washed, dried and chilled; arrange In
a salad bowl that' has been rubbed
with a cut clove of garlic, add four
tablespoonfuls of oil (good sweet
olive oil), ono of vinegar, u tablespoon'
ful of chilli sauce, a half teaspoonful
of salt and a few dashes of cayenno
pepper. Mix well, toss over tho let
tuce broken bits of Roquefort, using
as much or little ns ono desires. Add
more dressing In tills proportion, serv
ing nil very cold.
Crackers covered with Jam nnd over
that creamed cheese, is delicious with
a cup of tea for dessert

delicious breakfast fruit
when well ripened.
Ripe Currant Pie.
Crush u cupful of ripe,
red currants, add n cup
ful of sugar and let
stand. Beat the yolks
of two eggs and add two
tablespoonfuls of wutei
and u tnblespoonful of cprn flour ot
cornstnrch ; mix with the fruit and
sugar and cook until smooth. Bake
an under crust, 1111 with tho cooked
mixture, cover with n meringue, us
ing tho two whites nnd two table
spoonfuls of sugar. Spread over the
top and brown In the oven.
Currant Cream Jelly. Soak ac
purjco of gelatlnu In n cupful of wni
tcr until soft, then add u cupful of
boiling wnter and stfr until tho gela
tine Is dissolved. Add to this twoi
thirds of a cupful of currant Julcq
and a cupful of raspberry Juice.
Sweeten to taste uird stir until boil
ing hot over the lire. Struln and set
iisldo to cool. Add a half cupful of
powdered sugar to n pint of whipped
cream; udd to the gelatine mixture
nnd bent until stiff. Turn luto n wet
ted mold und pack In Ice nnd salt sev
eral hours.
Frosted Currants. Wash fine, largo
bunches of cherry currants, drain, dip
in tho white of egg, then In granu
lated sugar. Lay on paper to dry.
Serve as dessert.
Currant and Cherry Conserve.
Tako one pound of raisins, two
pounds of tart cherries, three oranges
(tho Juice and rind), four pounds of
sugar; chop the fruit nnd cook for
twenty minutes. Seal In small, air
tight Jars while hot.
Another Conserve. Cook live pounds
of currants until tender; ndd two
pounds of chopped rnlslns, cook ten
minutes, then ndd three pounds of
sugar. Cook ten minutes, add the
Julco and grated rind of two oranges;
reheat and put Into Jelly glasses. Tho
seeds of tho currant, If objectionable,
may he strained out before adding tho
other fruit In this conserve.
