Massachusetts Health Creed. SOMETHING ABOUT BREADS. There are enough kinds of bread to bo prepared In the home, which will snve white (lour. be palatable and yet offer a variety. Oat meal bread may be prepared In several ways and makes a most ac ceptable, tasty and wholesome loaf. Oatmeal Bread. Add u cupful of boiling water to a cup ful of oatmenl and let It stand well covered on the back part of the stove for an hour. Add when lukcwunn to a quart of light .bread sponge, add sugar, salt and n tnhlcspoonful of shortening. mix well, let rise, then stir and put ! into tne well-greased pans, when risen bake at once. This. bread needs longer linking than the bread that contains cooked ontmeal. Cooked Oatmeal Bread. Take n quart of cooked oatmeal left from breakfast, add a half cupful of molas ses, cool and add one yensteakc dis solved In a fourth of a cupful of water, one tablespoonful of salt and Hour to make a sponge. Let rise nn hour and a half, then make Into loaves. Knead at llrst In the mixing bowl, then put It out on the board. Luncheon Bread. Take two cupfuls of sweet milk, one egg, two tnblespoon fuls of molnsses, one half cupful of sugar (brown), two cupfuls of graham flour, one-fourth of a cupful of white flour nnd a cupful of cornmenl, four level teuspoonfuls of baking powder, n tenspoonful of salt and two-thirds of a cupful of nut meats, chopped. Lot stand 20 minutes before putting Into the oven. Bake one hour In a mod erate oven. Corn Spoon Bread. Take one cup ful of scalded cornmenl, one pint of sweet milk, a half cupful of Hour, two tablespoonfuls each of sugar and melt ed butter, two eggs well beaten, a tea spoonful of baking powder and a little salt; bake !!0 minutes. Bran Bread. Four cupfuls of when! brun, two cupfuls of whole-wheat Hour, three-fourths of a cupful of molasses, a tenspoonful each of salt and soda, two cupfuls of sweet milk, u cupful of raisins nnd n tablespoonful of shorten ing. Enke one hour. Let ine not hurt by nny selfish deed Or thoughtless word, the heart of foe or friend; Nor would 1 pass, unseeing, worthy need Or sin by silence whore I should de fend. CHICKEN FOR TWO. Many housewives who hnve hut two or three' In family hesitate to buy chicken except when en tertaining us It lasts so long. With nn Ice chest one small chicken will serve three or four meals fty two, not glylng very large servings to be sure, hut plenty enough to sat isfy a good nppetlto. Tho second Joint Is n good serving If grown on a normally nctlve chicken and with n good helping of mashed potato, plen ty of good gravy and another vegetable will make a good main dish even for the hearty mnn. The drum Btlcks may be honed, stuffed and used ns another meal, the wings, neck and back ns a stew with biscuits nnd gravy and there will still be enough bits to combine with apple, celery, nnd a few nuts to make a most sustaining salad for lun cheon. By planning to cook vegetables with meat in a casserole, the meat sen sons the vegetables ud a small serv ing will satisfy. Creamed chicken on toast may be one wny to use tho breast and other bits carefully removed from tho bones. The bones, crushed and cooked In cold water will make a cup ful or two of good broth, which may commence tho dinner. Of course we will not enjoy chicken for four meals closely following, but before there is opportunity for any spoiling it may be acceptably served. The back and neck may he made into a vegetable stew by adding carrots, onions, potatoes and celery with rice and cooking a long time well covered In the oven. For an Invalid the deli cate tlllet taken from the breast broil ed In a well-greased paper, makes a most dulnty tld-blt. Tho breast may he cooked, cut In sllres and served as sandwich filling with bucon, making n most popular and satisfying sandwich. Chicken Jelly. Tnko one chicken breast cut fine, and add to a pint of hot chicken stock. Dissolve a pnekngo of gelatin In a little cold water and ndd It to the hot stock. Season well and pour Into a mold. Serve cut In various shapes us salad or molded In small forms served on lettuce with mayonnaise or boiled dressing. Birmingham 8alad. Set upon heart leaves of lettuco two slices of pineap ple, cut half wny through the sections for eating nnd In tho center place n ball of seasoned cream cheese after cover ing the whole with dressing. To make the dressing take a half cupful of the pineapple Juice, and tho Juice of half a lemon, cook together In a doublo boiler. Beat the yolks of three eggs, add a tablespoonful of sugar, n fourth of a tenspoonful of salt, gradually beat In the hot fruit Juice and cook over hot water until smooth nnd thick, When cold nnd ready to use add whip ped cream to make It of tho consisten cy desired. It's easy to tell tho tollor how bost to carry his pack, And no ono can rate a bunion's weight till hs fools tho load on his back. SEASONABLE DISHES. Lay a thick slice of ripe tomato on a lettuce leaf, then on tho tomato a ring of green pepper one fourth Inch high. Fill with chopped mustard pickles, ripe olives nnd pearl onions ; garnish with sliced pickled wal nuts and servo any de sired dressing. Bran Bread Sticks. To one cupful of scalded milk add three tablespoonfuls of shortening, half a tenspoonful of snltjmd n table spoonful of molnsses; stir till tho shortening Is melted and tho liquid lukewarm, then ndd n cuke of com pressed yeast, softened In a fourth of u cupful of water, and ono cupful and a half of bran with as much bread flour ns can bo conveniently mixed In with u spoon. Tho dough should not bo mixed stiff enough to kneed. Mix and cut and turn with a spoon or knife, cover, and lot it rise to become light. When It Is double Its bulk, but ter the lingers and pull off bits of tho dough, roll ou a board and put Into bread stick pans. When very light bake 15 minutes. Brush with tho white of an egg and return to Iho oven to glaze. Rhubarb Baked Wlths Raisins. l'eel tho rhubarb unless very tender and cut In half-Inch slices. For a pound of raisins use a half cupful of raisins and a cupful of sugar. Cover tho raisins with boiling water and let cook until the water is evaporated to three spoonfuls. Sprinkle with rhu barb, raisins and sugar In a baking dish In layers and cook In the oven or on top of the range until tender but not broken. Steamed Pudding Without Eggs. Mix together two cupfuls of soft crumbs, ono cupful of stoned raisins, half a cupful of molasses, one cupful of milk, half a tenspoonful of salt, half a tenspoonful of soda and half a tenspoonful each of clove and cinna mon. Two tablespoonfuls of cocoa may bo added for a change If desired. Turn mto n buttered mold and steam two hours. Serve with hard sauce. Chicken Salad. Allow equal purts of cold cooked chicken, cut in small bits, celery cut In small slices with a little chopped cabbage, blend with mayonnaise and serve on lettuco leaves. Sift together one cup ful of flour, three fourths of u cupful of cornmenl, one third of a cupful of sugar, four teuspoonfuls of baking powder and n half-teusponnful of salt. Beat ono egg and one egg yolk; add three-fourths of a cupful of milk and stir Into tho dry Ingredients with three tablespoonfuls of molted butter. Deviled Rabbit. Melt half a table spoonful of butter In a chafing dish or a double boiler; ndd half a pound of common cheese cut thin nnd stir constantly until it Is melted; add one fourth of a tenspoonful of salt, half a teaspoonful of paprika, one, table spoonful of plcalll or mixed mustard pickle llnely chopped, ono tenspoonful of Worcestershire sauce and the yolks of two eggs beaten and mixed with half a cupful of mum ; stir constant ly und cook over boiling water until smooth and thick. Servo at once for luncheon or supper on hot crackers or bread toasted on ino side. Tango Salad. Hub them with the cut side of u lemon, set a ball of cream cheese or n fow cubes of Uoque fort In the cavity, sot these on heart leaves of lettuco and pour over a dressing mndo ns follows: Beat a fourth of a cupful of olive oil with a tenspoonful of vinegar, salt and mus tard, half u teaspoonful of paprika, and one-fourth of n cupful of chilli sauce, until well blended, then bent Into a cupful of mayonnaise.
