SHELLFISH DISHES. When the oyster season closes clams, cnibs and shrimps hnve their season. In ninny parts of our country these may bo obtained fresh from tho wa ter, but tho canned variety Is nofrto.be despised. Plain boiled crab eaten right from tho shell with n bowl of molted butter to dip them Into, must once bo eaten to prove It Is one of the choicest of dishes. Crab Salad. Tho crab meat is enrc- fully removed from the shell nfter be ing cooked in boiling salted wnter, mixed, with snlad dressing and served on lettuce or a bed of water cress. Deviled Crab. To tho meat from n dozen crabs add a tnhlespoonful of urentl crumbs, one tnhlespoonful of melted butter, one hnrd cooked egg, chopped line, n dnsh of pepper, two fohlespoonfuls of salad dressing and onion or cntchup to suit the taste. Put this mixture- Into tho cleaned shells, sprinkle with buttered crumbs and bake until tho crumbs arc brown. Clam Chowder. Fry four slices of salt pork, cut In flno dice, until brown; then ndd two tahlespoonfuls of Hour, and one large onion chopped flno. When the onion is light yellow ndd n cupful or two of diced raw potato and a pint of boiling wnter and when they are nenrly tender drop In a quart of clams that have been chopped or ground, season with salt and pepper, add a pint of hot milk and servo pip ing hot with crnckrs. Crab Stew Melt n tnhlespoonful of butter, add two of flour and cook until well blended. Add a beaten egg with a pint of milk, a pinch of soda and the meat of half a dozen crabs, suit, popper nnd celery salt to taste. Servo with hot hominy. Shrimps curefully cleaned arc served with celery on n bed of lettuce with salad dressing. Crab Croquettes. Prepare the crabs as for deviled crab, removing the- brown part. Mold in the form of cro quettes, add n Httlo baking powder to the bread crumbs used for dipping, using n yolk of egg and as much cold water as egg. Dip tho croquettes In tho crumbs, then egg and crumbs again and fry as usual In docp fut. Fish Soup. This Is made of tho fish bones and trimming cooked with car rots, bay leaf, leeks, parsley, a half dozen oysters and three potntoes, us ing a qunrt of the fish stock. GOOD SEASONING. There seems to be no difference of opinion In regnrd to the value of properly seasoning food. This sirup may bo used for fruit drinks, pud ring sauces and sherbets. Cherrv Mousse. Cook together n pound of cherries nnd one-half cupful of sugar. Put two tablespooniuis 01 cherrv itiico into n bnsin. ndd tho yolks of two eggs nnd cook over water stirring until creamy; Ulssoive ono nnd a half teasnoonfuls of powdered gelatin with a hnlf cupful of cherry Juice, add It to tho yollcs, wltn one half cupful of whipped cream and tho whites of the eggs beaten stiff and n few drops of red color. Pour Into small wet molds lined round with pn pcr; decorate with whipped cream nnd plstnchio nuts. Fruit Salad. Take u cupful of strawberries, one-hnlf cupful of rlpo raspberries, half n cupful of stoned cherries, threo bnnnnns, one-half cup ful of red currants, one-hnlf cupful of white currnnts nnd two tahlespoon fuls of chopped coconut. For tho salad dressing, cook together n half cupful of wnter, six tahlespoonfuls of sugar, and n cunful of fruit Juice, when thick ns slrun remove nnd chill. Pour over tho fruit and sprinkle with chopped coconut Just before serving. GOOD THINGS FOR THE TABLE. The following dish Is n good ono for n hot dish, as n largo number muy be served nt slight cost. Hot Chicken Sandwich. Cook tho chicken until very tender In plenty of water, which will bo used In m n k I n g the gravy. Cool nnd remove the meat from tho bones and cut It into bits with the scissors. Put tho skin nnd giblets, omitting tho liver, through tho mont chopper und mix the chicken with enough stock to mnko tho mixture moist; senson well with snlt and pepper. Thicken the remaining stock with one and n half tahlespoon fuls of flour mixed with cold water, using tills nmount for every cupful of stock. Let it boll und senson well. When serving, ullow two slices of Itrcnd cut thin; plnco ono slice on n hot plnte, spread u spoonful of the chicken mixture over It and cover with a second slice, then dip n ladle of gravy over It. Serve with a generous portion of well-cooked rice or mnshod potatoes. One chicken cooked nnd served in this manner will serve 15 people. Boiled Russian Dressing. Take two thirds of n cupful of any kind of boiled jalad dressing, four tablespoon fuls of strnlncd chill sauce, two table spoonfuls of diced pimentos, a half tnhlespoonful of chives cut in half-inch lengths, and a tnhlespoonful of turrn gon vinegar. Mix nil the Ingredients and chill well; then serve on lettuce Egg Dish. Melt n tnhlespoonful of butter In u baking dish, cover with crumbs and pour over n half a can of nlock turtle soup diluted witli a third of n cupful of hot water. Hrenk five eggs very carefully over tho top. Sprinkle with halX n teaspoonfut of suit, an eighth of a tcaspoonftil of pep per und u third of u teaspoonful of curry powder well mixed.
