Separate n chicken Into pieces nt fne joints, wash carefully, cover with boiling water and let boll quickly; after six to eight minutes reduce tho heat and let the liquid simmer until the chicken Is tender, about an hour and a half. Mix a half cupful of Hour with Mt!t and pepper and a little cream and stir Into the hot liquid; stir until boiling, then simmer 15 min utes. Add a pint of oysters and quick l.v reheat to tho boiling point. Servo with hot baking powder biscuit and celery. Chicken Mississippi Style. Pass through meat chopper one-fourth of u pound' each of veal and fresh pork, two slices of bacon and the chicken liver, half a green pepper and two sprigs of parsley, add u tenspoonful of scraped onion and a tunic-spoonful of Worcestershire sauce, half a tenspoon ful of salt, paprika to taste, mix thor oughly and use to stuff the chicken. Baste often and cook two hours, serve with sweet potatoes or rice. Calves Liver a la Bcgue. Cut a pound of calves liver Into hnlf-Inch cubes; wash, drain and add two onions, cut la slices, a dash, of paprika and half a dozen stalks of parsley, chopped; cover nnd let stand n half hour; shake the liver from the onions and roll In Hour. Put into a frying basket and fry In deep fat. Fricassee of Veal. Cut n slice of veal froin the leg Into servlng-slzcd pieces. Pound them to reduce the thickness one-hnlf. Roll In Hour nnd saute In salt pork fat until brown on both sides. When browned remove to n casserole, pour broth or hot water Into the frying pnn nnd boll until ull the Juices nre removed, then pour this liquid Into the casserole. Add Salt fnd pqpper, cover and let cook nn hour or longer. Serve from tho ens fcrole. Carrots nnd other vegetables i any bo added if desired. Scalloped Chicken and Kornlet ttso remnnnts of cold fowl. Free tho ineat of bono and gristle. For each Cupful of meat take a cupful df korn let and ono cupful of cream sauce. Mix the chicken with the sauce, then dis pose In layers In n buttered baking (llsh. Cover with buttered crumbs and brown In the oven. It is n tragic thing to think that in the big dtles of America thousands of schoolchildren are underfed. i f WAYS-WITH CRANBERRIES. When the fresh berries nre gone and I he winter Is upon us we welcome the ruby winter berry without which tho holiday table would be n disap pointment. Sttswed and sweetened, then put through a sieve, equal parts of water added and then frozea wo have a frappe which Is most dainty to serve with tho turkey or goose, duck or venison. The same amount of cranberry pulp mixed with rich milk, n little lemon Juice and plenty of sugar to sweutcn, then frozen, makes a most delicious sher bet to serve with any meat course. Cranberry Bavarian Cream. Stew a quart of berries ; While hot press them through a sieve; to a half pint of pulp idd n half cupful of sugar. Soak a quarter of a box of gelatin In X quar ter of a cupful of wuter, then dissolve over 1iot wnter nnd add to the cran berries. Turn Into a bowl and beat until cold nnd beginning to thicken, .then add half a cupful of rich milk and bent again ; at the last add 'n cup ful of whipped cream. Beat well and mold. Cranberry Conserve. Wash thfeo inarts of berries and put to cook with Imrcly water to cover, cook until, ten der, press through a sieve ami add to tills pulp six pounds of warm tfugnr, two pounds of seeded rnlslns, and four large manges; the oranges should be finely minced discarding the .seeds. Took until thick, then turn Into glass Jars. To Insure the skins of tho orange being throughly cooked Jt Is better to cook them separately for nn hour or two In clear water,. Scalloped Cranberries Moisten two cupfuls of soft whlto brend crumbs with hulf a cupful of melfed butter. Butter a pudding dlnhr sprinkle with a layer of'buttered crumbs, add a lay er of stewed and sweetened cranber ries, twelve large raisins, u" little grated lemon rind and sugar; continue with another layer until all the crumbs are used. Cover and bnke for half an hour In n moderate oven. Serve hot with hard sauce. Date Pudding. Chop a cupful of suet fine, add ono cupful of raisins, ono cupful of molasses, ono cupful of sweet milk, one cupful of walnuts, chopped; ono cupful of dates, two and a half cupfuls of flour, one tea spoonful of soda; steam two hours and setvo with an egg sauce, Beat two off kg until light, add a half cup ful of sugar, a tenspoonful of vanilla nnd n half cupful of thin cream. Whipped cream Is nlso n vory nice snuco to sorvo with this pudding. GOOD THINGS FOR THE TABLE. For a chnngo from the ordinary brend the following will be enjoyed: Southern Grist Bread. -Mash un til smooth one cup ful of cold, well cooked hominy. In to this stir ono well-beaten egg, o n o tablespnouful of tard, a little salt, one cupful of milk, and add lastly one pint of uncooked hominy. Spread tills In a well-greased baking pnn antl bako half an hour. Cut Into squares and serve hot with butter,, . Apple Sauce Cake. Take one cupful of sugar, one-half cupful or butter, one cupful of thick unsweetened ap ple sauce, one cupful of raisins, ono and a half cupfuls of Hour, ono ten spoonful of cinnamon, one-half tea spoonful of cloves, a tenspoonful of soda and n quarter of n tenspoonful of nutmeg. Mix and bake slowly In a slow oven -15 minutes. Sponge Bananas. Cover the bottom of a baking dish with small spongo cakes, cover with a layer of bannnas, sprinkle sugar and the Juice of an orange, add chopped nuts or grated coconut and bake 10 minutes. Servo with n custard or thick cream. Grapefruit Pie. Mix throe table spoonfuls of cornstarch with a cupful of sugar, add a tenspoonful of butter, the yolks of two eggs, rind nnd Julco of half a lemon and hnlf an orange, tho Juice of one-half a small grape fruit and one cupful of hot water. Cook In a double boiler, stirring con stantly until thick. Cook lew minutes longer to be sure to cook tho corn starch well. Put Into a baked crust, make a meringue of the whites of two eggs and two tablespoonfuls of sugnr, tilt on -the pie nnd brown In a slow oven. Halibut Salad. Place flaked halibut freed from skin nnd bones, on a bed of lettuce. Pound the yolk ofu hnrd cooked egg and three sardines to n sthooth paste. .Remove" the skin and bones of the sardines. Mix this paste with tho boiled or mayonnaise dress ing and pour over tho flsh. Garnish With slices of lemon. Pumpkin pic served with a jjarnlsh of whipped erenm nnd over that grat ed cheese of pronounced flavor Is a most dninty way of serving the always appreciated pic. A cup of tea Is a simple thing to pre pare, but often It Is so poorly prepared that It Is worse than a dose of medicine.
