Some years ngo n young mtin from
n small country town, on visiting Cin
cinnati, walked Into one of the down
town barber shops to have his hair

After the barber had clipped for
some time on the young man's head, he

actual blood test on all people who are

sign of age. See that the white Is fat
and soft and tho .wings tender. A
goose should hang several days be
fore ' cooking. Scrub carefully with
sodu water and n small vegetable
bruth, after singeing, to remove every
bit of soil on the skin. Itlnse Inside
with cold water and wipe with a cloth.
Some thrifty housewives scrub n goose
with soap nnd water, a process per
fectly good in Itself but careless cooks
sometimes leave a taste of soap on the
skin, a Ilavor which is not appre
ciated, especially In our latitudes.
Put the goose over tho lire and
,steam until all tho superfluous fat has
been extracted, then remove nnd wipe
dry, dredge with Hour and stuff.
Roast like a turkey dredging nnd
basting, allowing twenty minutes to
the pound.
There are any number of stufllngs
for goose and each may select tho kind
which especially appeals to her.
Boll threo white potatoes, mash
them ; chop three onions and Cover with
cold water, stir Into tho potatoes with
a spoonful of butter; salt and pepper
to taste, a tablespoonful of powdered
sago; mix well and stulT tho fowl
with It.
Take equal parts of mashed pota
toes and breadcrumbs, season with
butter, salt, pepper, onion, two hard
cooked eggs, chopped, and two table
spoonfuls of minced walnut meats,
bind with the yolk of an egg and fill
the goose.
The Norwegian cooks stuff a goose
with chopped, tnrt apples and stewed
prunes, and n most delicious filling

mixed with two tablespoonfuls of but
ter, some parsley, shallot, herbs and

Parisian Coffee Custard. Cook four
tablespoonfuls of coffoo in a pint of
milk flvo minutes, thon strain through
a Jelly bag; add tho yolkB of four ores,
boaton, with n cupful of sugar, nnd
cook over tho flro until thick. Cool
nnd add a third of an ounco of soft-
cned'v gelatin and a pint of whlppod
creant. Stir woll and stand In a cold
placo for an hour boforo serving.
Succotash Soup. Add the contents
of n quart can of succotash soup to
two cupfuls of hot water and slm-
mer this until tho corn nnd beans aro
tender enough to press through n
puree sieve. Cook a tablespoonful of
butter In n tablespoonful of Hour and
add two cupfuls of milk. When boll'
lug blend with the soun. Add 11 sea
soning of salt, pepper, onion nnd cel
ery. Serve with 11 spoonful of whipped
cream on top.
Corn Pudding. Open and air 11 can
of corn before using nt least nn hour.
Beat three eggs, add a pint of rich
milk, n tnhlcspoonful of melted butter,
salt nnd pepper and a hit of mustard ;
mix all together nnd biike In n lire-
proof dish standing In n dish of Hot
water. Cook until the eggs arc sot.
Tomato Bearnalse Sauce. Cook
threo egg yolks with ono tablespoon-
fill of water and n teaspoonful of but
ter, stirring over water until thick,
then add four tablespoonfuls of but
ter, salt, paprika and a tcnspoonflil
.of tarragon vinegar nnd take .from
the flro at once; add a cupful of toma
to sahce nnd servo a spoonful of this
sauce on each fillet.

Fancy Mocha Cakes.
Cream one-third of a cup
ful of butter with ono
cupful of sugar and mid
two well-beaten egg
yolks, add a cupful of
very strong coffee and half a teaspoon
ful of vanilla, then stir In two cupfuls
of flour, previously sifted with two
tenspoonfuls of baking powder. Fold
In the stimy-beaten whites of the eggs
and bake In sheets. When cool cut the
sheets Into desired shapes, cover with
confectioners' frosting and roll the
sides In coconut. Decorate the tops
with nut meats, stilt marmalade or
candled fruit.
Kris Krlnglcs Add one and - one
half cupfuls of granulated sugar to
two well-beaten eggs; add two and
one-half cupfuls of oat flakes to which
two tenspoonfuls of baking powder
andj u pinch of salt have been added.
Flavor with vanilla and ndd one tuble
Bpoonful of melted butter. Mix nnd
drop from n teaspoon on buttured pa
per and bake In a moderate oven.
Fruit Drops Wash and dry one
pound of figs. Add 0110 pound of rais
ins, ono cupful of walnut, meats and
put all through the grinder twice.
Shape into bnlls nnd roll In granulated
sugar, Press flat and put half a wal
nut on top of each.
Frosting for Mocha Cakes. Stir In
to two tablespoonfuls of boiling coffee
us much powdered sugar as will make

strong cocoa may bo used If preferred.

rose extract. When entirely cold add
four eggs, beatenvvory light, first ndd-

whites, put Into 11 deep dish which has
been warmed and buttered. Ilnko In

Apples Cooked With Pork Roast.
Core -and peel n half dozen medium-
sized tipples, stuff with bread crumbs
and raisins, finely chopped, and plao
around tho roirct; hasting tho apples,
when the meat Is busted will give thorn
a flno brown color and good flavor.
Serve as a garnish to the pork roast.
New Apple, Pie. Peel, cut in siloes
four tart apples; put into 11 saucepan
with Just enough water to show be
neath tho top layer, cover und cook
rapidly till tender. While hfit. add'
one-half cupful of sugar, one-half tea
spoonful of cinnamon, a quarter of a
teaspoonful of salt, ono teaspoonful
of melted butter and n teaspoonful or
two of lemon Juice, unless tho npples
nre vary tart. Stir well and add three
fourths of n cupful of crumbs, let
stand until they havo absorbed all the
Juice, then pour Into n baked shell
and cover with n mcrlngu?? or with
n sprinkling of brown sugar. Set in
tho oven until tho sugar is melted to a
brown caramel.
