Prune Sandwich.
Removo tho pits
from pruifes that have been soaked
ever night, then gently slmmored un
til tender. Do not add any sugar, as
thcro Is plenty ,of sweetness In tho
fruit Itself. Press through a slovo
and mix with a few chopped nuts;
spread on buttered bread.
For n delicious dessert, tako this
pruno pulp prepared ns abovo, mix
w 'i a llttlo sweetened whlppe cream
nnd heap on rounds ot sponge cako
that have beon soaked in n llttlo of
tho prune Julco. Sprinklo with
chopped nuts and garnish with a flno,
shapely pruno.
Prune Pudding. Mix well two
beaten eggs, a pint of milk, a cupful
of prunes that have been stowed nnd
pitted, a cupful of bread crumbs. If
sponge-cake crumbs aro used no sugar
need bo added; if bread, add sugar
enough to Bweoten, and a pinch of
salt. Bake In a slow oven until firm.
Servo with whipped cream or a lemon
sauco
Prune Jelly. Stow two cupfuls of
well-washed prunes that have been
soaked over night, until soft; pit and
press through n colander; add an
ounce of gelatin that has been softened
In cold water to cover; idd lemon
Julco, and sweeten to taste, then add
a half cupful of boiling water; turn
out to mold after It hna been well
mixed nnd the gelatin 's thoroughly
dissolved. Servo with sweetened
whipped cream.
Pruno pie may bo servod In more
than ono way. Dako a shell, fill with
tho stowed fruit, cover with a me
ringue and brown In tho oven. Or put
into an uncooked pastry shell, fill with
prunes, cover with latticed strips of
pastry and bako Servo with whipped
cream or a meringue.

yolks, and a pinch of

holler until smooth, strain and add -
half cupful of pineapple Julco, three
cupfuls of cream nnd a pint ot client
n"ts that havo boon boiled tender nnd
passed through a potato rlcor. Thon
freeze ns usual. When frozen, lino n
two-quart mold with part of tho mix
ture, add to tho remainder ono cupful
of candied fruits, finely minced; one-
half cupful of Sultana raisins nnd six
chopped chestnuts (uncooked). Fill
the mold nnd pack In lco nnd salt; let
stand threo or four hours to ripen.

Is entirely worth tho work of prepara
tion, for It Is truly most delectuhle.
Nougat Ice Cream. Mako a custard,
using ono cupful -of sugar, two ctinXulB
of milk, five egg yolks nnd a half
tcaspoonful of salt: cook nnd strain
When cool, add two cupfuls of cream,
whipped; then add a fourth of a cup
ful each of chopped filberts, walnuts,
almonds, and hickory nuts, r tcaspoon
ful of almond extract nnd the well
beaten whites of tho eggs folded In.
Freczo as usual and allow to stand
foV four hours.
Pistachio Ice Cream. Pound four
ounces' of the blanched pistachio nuts
in a runrtnr. ndd n fnw lirnns of rose
wntnr tn form n. nnstn. Add nno nun?
ful of cream and ono of sugar. Mix
all together with another cupful of
sugar and three cupfuls ot cream, six
eggs. Cook until smooth and thick,
then freeze ns usual.

Corn Chowder. Fry a half pound
of diced salt pork in a big saucopan
until brown; add ono sliced onion nnd
cook until light brown; thon ndd four
sliced potatoes that have been par
boiled ten minutes, a can of corn and
a pint of boll ng wntor; cook Until tho
vegetable aro tendor, thon add
quart of rich milk, pepper. Bait and a
half dozen crackers which havo been
soaked In a llttlo milk. Servo with n
cracker on each dish of soup. Cod

or corn and is a most satisfying
