Calves' hearts aro most dollclous nnd

burning. Two small hearts will servo
half a dozen people.
Stuffed Cabbage. This Is a dish
which may be varied In nny number of
ways. Cut out tho center of tho cab
bage, leaving a thick shell for tho
Illllng. Tako a pound of sausngo or
hamburger steak or a intxturo of
chopped 'pork and hamburger, add a
half tcaspoonful of ginger, n pinch of
nutmeg or mace, a tcaspoonful of Bait,
a dash of lomon juice; stuff tho cab
bage and steam until tender. Servo
in slices with molted butter for a
sauce or a white sauco with hard
cooked egg yolk and lemon Juice
rubbed smooth added to tho sauco.
Braised Liver. Wash two pounds
of fresh liver nnd flour ve'ry thorough
ly, seasoning with lemon Julco, salt and
poppor. Lay it in n casscrolo or en
amel dish; add two sliced onions nnd
six carrots, shredded longthwlsq, a
bay leaf," a sprinkling of parsley and a
pint of boiling water. Place thin
slices of bacon over all, cover tightly
and bake for an hour and a half; than
remove tho cover, basto and brown
for ten minutes. Servo with tomatoes
or chill sauco.
Creole Rice. Chop ono largo onion
nnd a small slice of cooked ham, very
lino; put Into a saucepan with ono
tablespoonful of butter, add a cupful
of cooked rice, a can of tomatoes, a
teaspoonful of salt and a littlo pa
prika. Mix woll, then put into a bak
ing dish, cover with bread crumbs and
put Into tho oven for 15 minutes.
Beef's Heart Browned. Wash and
Hrlm a beef's heart, but do not re
move tho fat that surrounds It. Soak
In weak vinegar and water over
night, then stuff with any woll sea
soned forco meat. Lay In a kcttlo
and brown; turn until woll browned.
Add tho water (boiling) in which It
was soaked, cover cloBoly and simmer
three hours.
SOME GOOD SOUTHERN DISHES.

these recipes may be
come most appetizing

tasty, but It must bo
used with miserly cprq.
Food need not bo fried
in lard, butter may bo used In Its
place or ham or bacon fat.
Jambalaya of Chicken. Fry a young
chicken, cut In pieces, In hot fat with
a fow slices of nam. Put Into the'
flreless cooker. Fry a sliced onion,
two tomatoes, and when nearly done
add a cupful of rice, stirring con
stantly. Pour these over tho chicken
with enough boiling water to cover,
season with salt, popper, bay leaf,
thyme, chopped parsley nnd a bit of
red poppor. Cook ten mlnutcH, then
transfer to tho cooker. This may need
Bomo cooking to reduco tho gravy bo
foro sending to tho table as tho dish
should bo served quite dry. Two or
three hours will bo long enough to
cook a young chicken.
Creole Gumbo. Cut In pieces a
young chicken. Wash and sprinkle
with salt and pepper nnd fry In hot
lard. Pack tho pieces In tho cooker
kettle. Add a sliced onion to the fat,
removing some If thcro Is too much.
When tho onion Is tender, add a spoon
ful of flour, brown this carefully, add
ing a littlo hot water to keep It from
burning. Have ready somo small
pieces of ham, two dozen oysters, two
dozen boiled shrimps, and add theso to
tho contents of tho pan. Then pour
over tho wholo threo pints of boiling
water. Cook together for a fow min
utes, then pour ovor the. chicken.
There should bo enough liquor to cov
er tho chicken. Boil flvo minutes,
senson to taste nnd placo In tho cook
er. Before Bervlng, heat to reduce
tho gravy. Pour Into a tureen, sprin
kle with chopped parsley nnd send to
tho table with chopped parsley and
rice cooked dry.

It Booms Arm, woll browned and
crusty, take from tho oven nnd serve
Immediately, as It falls quickly.
A most delicious fudge may bo mnde
by using raisins Instead of chocolate.
Tako two cupfuls of sugar, a third ol
a cupful of corn sirup, a half cupful
of milk-two fablcBpoonfula of butter
and boll to tho soft-ball Btugo. Add a
half cupful of steamed chopped raisins,
nnd tho same amount of walnut meats.
Fruit Salad. Romovo tho pulp from
two grapefruits, add threo tablespoon,
fuls of plnonpplo. a half pound of
grnpos, - skinned and seeded, n fow
mnrshmullows, cut in quarters,
whipped cream, with two tablespoon
fuls of cooked salad dressing, Btlrred
into it', add seasoning of salt nnd u
dnsh of cayenne. Handle nB lightly
ns poaslblo, for tho grapefruit crushes
and becomes too juicy, spoiling tho
salnd.
Grapefruit Salad. Tuko two grape
fruit, ono red and two green poppors,
and ono cupful of llnoly diced celery.
Romovo tho grapefruit to koep tho
sections unbroken, chop tho poppers
and arrange tho sections (two or
threo) in a neat of lottuco, sprinkle
with tho poppers-nnd colcry and servo
with a good French dressing, substitut
ing tho Juice of tho grapefruit for
some of tho vinegar In tho dressing.
Servo on watercress. Ono may Borvo
this in tho grapefruit shells; thon
tho sections should bo'brokon In pieces
nnd tho other Ingredients lightly mixed
with tho grapefruit.

cherry or two on top of each glass.
Waldorf Salad. Chop lino, four tart
apples, squeozo ovor them a littlo
lemon Julco and ndd two cupfuls of
tender, llnoly cut celory nnd a cupful
of pecan meats; toss all together light
ly nnd add a cuprul of mayonnalso
dressing. Gnrnlsh with chopped green
poppers or thinly sliced radishes.
Hamburg Sponge. Placo In tho up
per part of a doublo boiler one- pint of.
milk, ndd two well-beaten eggs and
two tnblospoonfuls of sugar. Cook un
til well thickened, removo from tho
heat nnd add a half pnekngo of gela
tin which has boon softened In wnlor
to covor. Flavor with orange Julco
and tho grated rind pf. nn orange
When tho gelatin inlxturo begins to
stiffen, boat to a foam with an egg
beater, fold In a tnblespoonful of pow
dored sugar and a cupful of cream
beaten stiff. Turn Into largo sherbet
cups which havo boon lined with mncn
roons and placo on Ico to chill. Servo
garnished with candled cherries.
Kidney in Scallop Shells. Soak kid
noys In n littlo acidulated water for on
hour, then cook In a littlo soup stock,
to which 1b added a minced onion, a
bay leaf, a stalk of celery and a currot.
