German Goettc. Boll two pounds of
Hank beef until tender, then put
through a meat grlndor. Add to tho
liquor saved froni the boiled beef, a
pound of cornmcal and cook until tho
meal Is well cooked, a half-hour will
do; then mix wljli It tho meat, season
well with pepper and salt and cool m
a deep dish. When waited to uso, cut
slices and fry a deep brown. This
will keep some tltno.
Potato Pancakes. Peel and grato
six potatoes which havo stood in
cold water to harden- Mix ono grated
onion with tho potato, two eggs, a
half teaspoonfuliof baking powder and
Hour to malio a thin batter. Fry in
cakes until, a deep brown.
Macaroni With Mutton. Brown in
butter a few slices of cold mutton and
arrange them on a platter. Chop half
an onion, fry in butter and add a cup
ful of stock, one cupful of tomato pulp
with salt and popper to season; bring
to tho boiling point, add a cupful of
macaroni, cooked In salted water and
drained. Stir all together over tho
flro and servo hot, poured around tho
meat heaped In tho center of the
platter.
Calf's Liver en Casserole. Fry until
crisp and brown flvo slices of bacon.
Add to tho hot fat, one dozen potato
balls, ono dozen carrot balls, ono stnlk
of celery, diced, and six sliced onions
Cook very slowly for ten minutes,
then place In tho casserole. Wash tho
sliced liver and lay on top of the
vegetables, add seasonings, a table-
spoonful of kitchen, bouquet, cover
with a pint of boiling water and cook
well covered for an hour. Do not re'
movo tho covor while It Is cooking.

FOR THE LOBSTER LOVER.
Where lobsters aro to bo obtained
fresh and in good condition, tlicro is
no moro highly prized
delicacy. It is not so
many years ago that we
were taught to plunge
live lobsters Into boiling
water to kill them. Wo
have learned that this Is
unnecessary cruelty, as
thoy can he quickly
killed by thrusting
sharp knife into tho
back between tho body and tall shell;
death will occur at once. For those
of us who havo endured tho sensation
of dropping a lively lobster into a
kettlo of water and felt like a mur
derer, this method will seem easy.
Lobsters which aro full of motion
and heavy aro fresh and good. If tho
tail f a boiled lobster is lifted and
springs back to Its curled condition
its freshness is assured. If this test
falls, reject tho lobster, as It is too
long dead. Tho coral of lobster ts
red, tho spawn Is groen before It Is
cooked, when it turns red, as do lob
sters, as thoy aro green before boil
ing.
A broiled lobster is a most delicious
dish and ono in which tho epicure de
lights. Kill tho lobstor as described,
and split down tho bnck with a sharp
knifo and mallet, remove tho stomach
and intestines; the stomach is directly
under tho head, the Intestines runs
tho length of tho tall piece and are
often colorless, so must not be over
looked. Placo tho two pieces with the
shell part over tho heat and broil for
u half hour or longer. When hnlf-
cookod, season generously with but
ter, and when thoroughly cooked add
butter, salt and lemon juice. Crack
tho claws before serving.
A Boiled Lobster. Duy lobsters that
aro allvo and kill them as nbove, then
drop them Into a gallon of boiling wa
ter. In which a fourth of a pound of
salt has been dissolved. Plunge and
completely cover the lobster and cook
from twonty-llvo minutes to three
quarters of an hour, depending upon
tho weight of tho lobster. If cooked
too long tho meat will be tough. Hreak
off the claws, crack them at tho Joints
and pick out the meat. GarniHh tho
lobster with tho claws and uso the
shell to servo It in if so desired.

and delicate. Wash and
cut them, adding a bit
chopped onion and oil with vine
gar, salt and pepper. Tho dcltcato
bitter of tho dandelion makes thorn
espcclHlly well liked and a good tonic.
Veal Fricassee. Cut a pleco of tho
breast of veal hit
fry in butter until
with Hour, salt, nutmeg; ndd a bit of
bay leaf and n few peppercorns, covor
with water and cook slowly for an
hour on the hack of tho stovo or over
very slow heat. Beat two eggs, mix
with a littlo of tho gravy, then ndd to
tho meat. Servo on a hot platter with
the gravy poured over tho meat.
Liver Dumplings. Put a half pound
of calf's liver through a meat grinder.
Soak a thick sllco of bread In water
and squoezo dry. Put a tablespoonful
of butter Into a frying nan. add n
tablespoonful of chopped onion, salt
and popper to taste. Dcat thrco eggs
and pour into tho pan. Now mix tho
liver with tho gravy. Roll out somo
crackers, make balls of tho liver, dip
In craclccr crumbo and add to any good
beef soup. Cook until well lone.
Servo with tho soup.
Nuts and Ego on Toast. Toast
slices of bread, butter well and servo
with three eggs, halt a cupful of
chopped nut meats, ono tablespoonful
of cream and a dash of pepper and
salt; stir all together, turn Into a skli
let in which a tablespoonful of ollvo
oil has been heated. Mix and stir
as it thickens. Servo on tho toast
when firm.
A thin siico of pineapple put on a
buttered slice of bread .spread with
cream chceso makes a most dainty
sandwich.
A pretty dish and ono which is most
palatable is green peas cooked in very
littlo water seasoned with butter and
pouredvovor hard cooked eggs cut In
eighths.
Celery, root cooked until tender nnd
served in u sour sauce, cither hoi
kuulalso or plquante, makes a pala
tablo salad for a change,

lightly with water. Place a bunch of
wet cotton or tissue paper at tho ends

Orangeade. Take two cupfuls of
orange julco, add cupfuls of sugar,
ono cupful of strained cranberry sauco
and two quarts of water. Boll tho
sugar and water together for llvo min
utes, then cool and add tho strained
juices. Garnish tho glass with a thin
sllco of ornnso or a bit of tho peol
hung on tho edge of the glass.
. Orange Puffs. Tako a cupful ot
flour, and a half cupful of sugar, a
half cupful of milk; sift with tho Hour
a teaspoonful of baking powder with
a half teaspoonful of Bait, add ono
egg, beaten, add one tablespoonful of
melted butter, flavor with tho grated
rind of an orange. Steam In buttered
cups 25 minutes and servo with orango
sauce.
Orange Sauce. The Julco of two or
anges, one cup of boiling water, ono
tablespoonful of lemon juice, two ten-
spoonfuls of cornstarch, four tablo-
spoonfuls of sugar. Mix tho sugar
and cornstarch and add tho water,
cook until the starch Is well cooked;
add n tablespoonful of butter and tho
orango julco with a littlo grated rind.
Orange Salad. Servo neat slices of
orango on lottucc with a dressing of
oil and vinegar. This Is especially
good with game. Another nlco way
to servo It Is In overlapping slices on
a long salad dish garnished with can
died cherries, oranges and grapes
with n bit of pineapple is another flno
combination for a fruit salad. Spongo
cake flavored with orango and served
with an orango tilling, then frosted
with an Icing flavored with lemon
julco and orango rind Is a delicious
dessert.
