Simmer gently, allow ing ten minutes to tho pound for cook ing. Lift out carefully, romovo tho cloth and gamlBh with parsley and lemon quarters. Fish a la Creme. Carefully remove all tho bones from cold boiled flsh, flaking tho meat with a fork. To a bubbling hot tublespoonful of butter add a tublespoonful of flour, then ndd a pint ot milk; season with suit nnd cnyonno poppor. Put a layer of tho flaked llsh In a well buttered baking dlBh, ndd a layer ot the white sauce, moro flsh and sauce, then sprinkle tho top with well buttered bread crumbs. Bake until brown.
