AUGUST 11. 1917. 11 DRY' FRUITS CHEAP 1 IN THE NEW PLANTS Substations for Collecting the Fruits to Be Installed by the Women's Conser vation Club. , Umahans may soon dry their own fruits knd vegetables for winter use at the, very trifling sum of 3 cents a market basketful, according to Mrs. A. C 'Anderson of the Woman'Vot ers' Conservation league. District dry ing with substations will sooi. be in stalled, where those living in the 'vicinities of the respective stations may leave their fruit and vegtables, properly pared and sliced,' ready for the drying process. An express truck will make the rounds of the substa tions every daj, hauling the produce to the drying plant, thus saving the tost of car fare to those v.ho.wish to lay up stores for the winter. . Revolving motor fans are used in the drying. Twenty-four ' hour' is required to dry the produce thor oughly. Electric ovens will soon be installed to complete the drying op eration. This step insures the de struction of any stray insects which might lurk among the vegetables, and which the air-drying does not always kill. -;A chaiiman will be in 'charge at each substation to check out and check in the baskets of produce left there. At present the only drying plant in, the city is the one recently installed, at the Central Park school, which is now taxed to its utmost capacity. Take one cupful of rolled oats and two tablespoouftils of butter and boil in one cup of mil'.c for a minute. Set aside until lukewarm. Dissolve one compressed yeast cake and three tablespooinuls of sugar in four table spoonfuls of warm water and add this to the first mixture. Add half a ctip of white flour and the same amount of whole wheat flour to gether with one teaspoonful of salt and beat the whole well together. Cover tlvs batter and let stand for about a., hour to rise. .' It should be a thinner batter than ordinary yeast bread batter, as the oatmeal will swell irorc. At the end of an hour, fill well-greased muffirt rings with the batter, making them about two-thirds full. Let rise for forty minutes again and then bake for twenty-five min utes in a moderately hot oven. Cucumber Salad. Cut three medium-sized cucumbers into dice. Mix with one cupful 'of fine-chipped olives, three hard-boiled eggs and three-fourths of a cup of broken nut meats pecans or English walnuts. Serve on crisp lettuce and garnish with mayonnaise. Pickled nasturtium seeds make a tasty addi tion to this. Fruit Ice. Mix .'i.ee cupfuls of fruit or berry juice with one cupful of water, sweet en to t- . and add the juice of half a lemon, if a little more acidity is desired. Let stand for an hour and ttrcn, freeze. Raspberries, cherries, currants and pineapple (cooked) may be used, in this , way.. Such a simple ice is refreshing on hot days and if a housewife is so fortunre as to have one of the modern wasjiing machines that turn an ice cream freezer at the same time as it turns the washer, she can have .the Monday dessert ready whn the washing is finished. In spite of the fact that apples have just arrived on the markets they are considerably cheaper than potatoes. The tubers, although nearly every body seems to luve them growing in the garden, hold up around half a dollar a peck, while new apples sell around 35 cents a peck.
