BACTERIA AND BUTTEBFAT
Dairy and Milk Inpector Bosale. reports
that during the year, alxty-one of 1,37
cowa tested for tuberculosis were found
to he Infected to the extent that they were
ordered slaughtered. Since the merger
of South Omaha, tlitrty-seven of 2t9 dairy
cows of that district were condemned,
after the tuberculin test had been applied,
the per cent of infected cows being
fifteen, much higher than prevailed in
Omaha proper.
Of elghty-slx milkmen arrested for
violations all but ona were convicted,
suspended f'nes being imposed on the
first offense.
The report states that out of 762 sedi
ment tests made of bottled milk by the
Omaha department and XX by federal in
spectors, only fifty samples showed sedi
ment. A total of 4.222 milk and cream
samples were taken during the year, some
In conjunction with the federal inspectors,
who were here for several weeks. The
samples were tested for butter fat. bac
teria and adulterations. The coat of the
Inspector's department for the year was
S1.952.
The standard which the bacteria, teat
la applied la that milk having less than
100,000 bacteria per cublo centimeter is
regarded as safe, and the relative quality
of the milk is baaed on the variation
nhove or below that standard. Of 840 bac
teria tests made 751 were under and
seventy-nine were above 100,00ft The
samples were taken from wagons, res
taurants, grocery stores and from resi
dences on request. '
Quality of Milk.
Inspector Bossie made the following
report of Omha's milk and cream supply,
tha first column of figures referring to
the bacteria tests and the next column
showing the per cent of butler fat found
in samples tested:
