^ Social Briefs *| Miss Susie May Whitehall, of Omaha was in the city last week visiting friends and relatives. Also visiting in the city Sunday was Mrs. T. J. Johnson of Omaha, formerly Eloise Tinley of this city. Richard C. Holcomb, son of Mr. and Mrs. Ray Holcomb, has re turned from the Armed Forces. He arrived home on Tuesday. Rev. W. C. iTawell, pastor of Raymond Methodist Church in Raymond, Neb., was guest speaker at Quinn Chapel morning service. Sunday Rev. J. B. Brooks was morning speaker at Raymond Methodist Church. He was ac companied by his sons, Wendell and Walter. Sunday evening Rev. Mr. Brooks was speaker at Calvary Evangeli cal United Brethren Church. The senior choir furnished the music with solos by Miss Mary Samp son and Paul Kidd. Mrs. Joseph Adams and family arrived in Lincoln Thursday to spend some time with Mrs. Adams’ parents, Mr. and Mrs. Joseph Green. Sgt. William Mosby left Sunday night for Colorado after spending several weeks with his mother, Mrs. Vashti Mosby. Wendell Dean left Sunday night after spending several days with his mother, Mrs. Rozena Dean who was taken ill. She is re ported much improved. During a series of meet ings a special committee will point out the many interests of political concern which Lincoln citizens should have. Voters will be urged to become informed and to make an effort to let candidates know their opinions. The Committee of 100 Families will be supported by the North side Council. Members of the spe cial committee are: Harry Peter son, Howard Molden, C. O. Shep ard, Clayton Lewis, Rosco W. Am bers, Fred Bradley, Carl Finley, George Randol, Jewell Kelley and James Wadkins. The first meeting will be held at the Urban League, Friday, February 15, at 8 P.M. The meet ing is open to the public. and Mrs. Kathryn Sherriffe left Tuesday. Mrs. Mattie Welch, of Great Falls, Montana stopped in Lincoln enroute to Washington, D. C. she stopped at the home of Mr. and Mrs. John Johnson. She is the mother-in-law of Dave Nelson. Mr. Wm. Patrick of Grand Island is a patient in St. Eliza beth hospital. Household Hints wife.# By Miss Mary Sampson 2811 S. 24 — 3-6212 and Mrs. Odessa Johnson Miss Sampson 18,0 A **• “ 8**1#l Mrs. Johnson Let's Have a "Chicken Good Time" Crusty Herb-fried Chicken One 3-to-3*4-pound chicken— Vz tsp. thyme—Vz tsp. marjoram— flour—fat—Vz tsp. rosemary—2 tbsp. fresh minced parsley—1 tsp. salt—V4 tsp. pepper—Vz cup hot water. — Cut chicken in serving pieces. Sprinkle with thyme and marjoram; let stand Vz to 1 hour. Roll in flour and fry in Va inch hot fat just long enough to brown on both sides. Remove each piece as it browns and place in shal low pan. Sprinkle with rosemary, parsley, salt, and pepper. Pour hot water in frying pan; stir thor oughly. Pour over chicken. Bake 1 uncovered in moderately hot even (375) about 45 minutes. Serves 6. Spanish Chicken One 2-to-2*4-pound chicken— 1 cup chopped onion—2 cloves garlic, minced Vz cup diced green pepper—% cup pimiento, cut in strips, 1 cup uncooked rice—1*4 cups chicken bouillon—1 Vz tsp. turmeric—dash chili powder—1 tsp. salt—pepper. Cut chicken in serving pieces. Roll in seasoned flour and brown in hot fat. Re-' move from skillet. Cook onion garlic, and green pepper in re maining hot fat till onion is golden. Add pimiento and rice; stir over low heat about 2 minutes. Add remaining ingredients. Heat to boiling. Pour into 2-quart cas serole; arrange chicken on top. Bake in moderate over (350) 1 Vz hours. Party Chicken Ring Va cup butter—Vz cup enriched flour—1 tsp. salt—3 cups chicken stock—Vz cup milk—1 tsp. lemon juice—pepper, paprika — 3 cups diced cooked chicken — Vz cup sliced stuffed olives — 2 tbsp. chopped pimiento. Melt butter; stir in flour. Add salt, stock, milk. Cook over low heat till thick, stir- j ring constantly. Add remaining ingredients. Heat. Biscuit ring. Sift together 1 Vz cups enriched flour, 1 tbs. baking powder, tsp. | salt, and Vz tsp. poultry season ing. Cut in Va cup shortening. Stir in Vz cup plus 2 tbsp. milk. Bake in greased 2 inch ring mold in hot oven (450) 15 minutes. Brush with butter; fill with the hot chicken. Chicken Pie With Yam Biscuits. \x/z cups diced cooked chicken— V4 cup diced cooked carrots—6 small cooked onions—1 tsp. pars ley—Vz cup evaporated milk—1 10 Ms or 11-ounce can cream of chicken soup — 2 tbsp. enriched flour—Vi tsp. salt—V\ tsp. pepper. Place chicken and vegetables in 1 Vi-quart casserole. Add milk to half of soup. Heat to boiling point. Blend flour and seasoning with • emainonig soup. Stir into hot mixture. Cook till thickened. Poul into casserole. Top with Yam biscuits. Bake in moderate oven (350) 45 minutes. Yam Biscuits: Sift together 1 cup enriched flour. Vi tsp. salt, 2 tsp. baking powder. Combine 1 cup cooked, mashed yams. Vi cup melted butter or margarine, and 1 beaten egg. Add dry ingredients. Blend. Drop bis cuits from spoon.
