Giblet scrapple squares Turkey giblets Vz cup white corn meal 1 Vz cups boiling water IV4 teaspoon salt 1 teaspoon sage 1 Vz cups cooked or canned corn (Whole kernal corn) ^3 tablespoons fat or salad oil Flour Cook giblets until tender. Gra dually add cornmeal to water; cook, stiring constantly until thick and boiling. Place over boiling water; cook 30 minutes, stirring occasionally. Add salt and sage, chop corn. Combine giblets. Corn meal mush and Corn pour into greased mold. Cover chill until firm. Cut slices Vz inch thick. Coat with flour saut’e in fat or salad oil. Brown on both sides. „ Uses for Crushed Nut Meats Brazil nuts will be plentiful this Christmas. When buying them, rjt is well to remember that IVz pounds Brazil nuts in the shell equal Vz pound shelled nuts. One pound shelled Brazil nuts equals 3 cups shelled nuts, and 1 cup shelled nuts equals cup toasted and rolled nuts. Crushed Brazil nuts may be sprinkled over ice cream, fruit puddings, and salads. They may be added to poultry stuffing. Cream sauce made to use on cauli flower or onions is delicious with chopped Brazil nuts added to it. Mushroom sauce made to serve with ■ spaghetti, meat loaf, meat patties, or an omelet is given a delectable flavor when crushed Brazil nuts are added to it. When toasted crushed Brazil nuts are used in cakes recipes, the quanity of shortening should be reduced about 2 tablespoons per cup of Brazil used.
